Raw Goat Cream????

Has anyone found goat cream? We get goat milk but have not been able to get any good amount of the cream to seperate. Does anyone have a trick to get the cream to separate on the goat milk?

Goat cream doesn't separate out like cow.  I think it can only be done with special equipment---a centrafuge ---to separate it.

Jan is right. I was speaking to my supplier of my raw goat's milk, and she said that it will not separate like cows milk, at least naturally. Doing a little research I found out that goat's milk is kind of naturally homogenized because the fat globules are much smaller than cow's milk. I suppose I will be on the lookout for raw cow dairy farmers soon, because I am also looking for raw cream, and butter.

That is true that goat milk is (for the most part) naturally homogenized. I am wondering though how goat butter is made then? I have seen it at Whole Foods.......

I used my cream separator on our goats milk after straining.

I suppose you need a cream separator, like Arduinna and Jan said. It must be done through some sort of contraption, because you can't get it naturally like with cow's milk. It is definitely natural, but it's hard to come by unless you have equipment to separate. Will probably look into that, though, because I am also wanting raw cream!

If it sits for a day or three in the fridge you will get a richer top level on the goats milk, kinda like a thermocline in water. And you can spoon it off with a ladle, but it isn't as thick as cream it's more like a thinner half and half.
