I cooked some roast today and there is a thick layer of fat over the top of the liquid in the crockpot.  If I chill it and scrape it off can I cook with the fat? If it's fine to do what would you cook in it? Potatoes maybe?

I don't cook with it as is, but you can put it through the rendering process -- add with water to a pot, cook for a while so the impurities end up in the water, then chill. Â The fat that hardens on top will be a lot less strong flavored. Â Another option that I prefer is to add it to the bones when I make broth, using one pot for both purposes. Â All of the fat from the bones will render out and end up getting hard on top and all of the impurities from the fat will dissolve and end up in the broth. Â WIN WIN!
