OK so I am so excited I thought I would share. My kids are 3 and 5, very very picky, like soup, hate mine, BUT NOT this time! WOOOHHOOOO

 

1/2 onion

2-3 cloves garlic

small can V-8

can kidney beans

2 carrots

1 celery stalk

small amount of spinach (about 1" cut off the end of a frozen spinach block)

2tsp Italian seasonings (Spice Islands - oregano, marjoram, savory, thyme, basil, rosemary, sage), add more to taste I didn't measure

2 bay leaves

small pasta (ie mac, shells, etc.) maybe 1/2 to 3/4 cup, didn't measure :o)

salt & sugar to taste (probably a Tbsp salt, and less sugar, I thought I added too much salt at first, so I threw in the sugar)

 

I cut the onion large, I scoop them out when I serve it. Sauteed the onion, til soft, added garlic sauteed til smelly (er aromatic), added v-8, veggies and probably 3-4cups water (I had to add more for the noodles, so I am not EXACTLY sure about the water). Bring to boil, add noodles, simmer. (filled a 2qt saucepan)

 

My kids asked for seconds! I am so excited!
