Vegetarian and/or Healthy, Fresh Restaurants SAN DIEGO

We have a 5 day trip ahead to San Diego.....Any recommendations for great restaurants that are fresh, healthy and have vegetarian/vegan options?

Also, great health food store recs would be appreciated as well.......

If you make the trip up to Carlsbad, where Legoland is, I can recommend The Armenian Cafe (falafel salad- big salad with lots of veggies, lemon and olive oil dressing, olives and tiny little falafel balls as croutons - omit feta for a vegan dish) Caldo Pomodoro, (Capellini Pomodoro) and Las Olas(vegetable tostada). I'll be watching this thread for San Diego ideas, though, because I'm sure that we'll be spending at least a day down there.
