My middle son was recently diagnosed with the following food allergies: peanuts, corn, cantaloupe, summer squash, sesame, pecans, almonds, soy, pork, barley, oats, strawberries, peaches, green peas, green beans, carrots, celery, as well as a whole host of other environmental allergies. He's thankfully not anaphalactic at all - his symptoms are dry skin and gastro discomfort/occasional vomiting. We're eliminating them all and then trying to add them back in from mildest to strongest in terms of the allergic response.

We've been able to make substitutes for most of his favorite things, but I'm hung up on one: granola bars. I used to make a great granola bar the kids loved with all sorts of dried fruits, nuts, etc in it. I can't for the life of me figure out how to make a good granola bar without using a nut butter of some sort, or a substitute for oats.

Any good ideas? My mind is confusingly blank when it comes to this right now.
