Healthy Scones??

Hi there,

 

My ds and my dh are obsessed with scones and jam for breakfast. Problem is is that the ones they beg me to buy from the store are crap. I am sure they are nothing more than white flour and suger with a few raisins thrown in. Anybody have a healthy scone recipe? Just something that I can feel good about giving my lo for breakfast that he will enjoy. TIA

The Joy of Baking has some scone recipes (http://www.joyofbaking.com/SconesIntroduction.html). I have made the cream scones and substituted King Arthur white whole wheat flour, which is pretty close to all purpose but with whole wheat nutrition, and they came out great. I think that I added dried cranberries, but they would work with any dried fruit, I think. I suppose that you could also switch out the sugar to another sweetner of your choice. They were very easy to make and now I think I will be making them this weekend, now that you reminded me of them...They have some other recipes on the same site, but I have not tried them.

I use white wheat also and my kids are perfectly happy to eat it.  It always comes out a beautiful golden color, too.  The only comment I wanted to add is to point out that I have been unable to find unsweetened dried cranberries here in the US.  You can get regular, less sugar and fruit juice sweetened, but it's still a lot more sugar than I want.  One of my plans for this year is to dehydrate my own when they are in season!

I don't know how healthy they are, but these are literally the best scones I ever had. I have subbed whole wheat pastry flour to good effect. I tried to make them gluten free, and it was a disaster.

I'm not sure what qualifies as 'healthy' but anything you make yourself is going to be better for you (and probably taste better) than anything store bought.  Scones are fairly easy to make, freeze well, and you can make them sweet or savory.  I use half WW flour and whole milk.

I use the recipe in Deborah Madison's Vegetarian Cooking for Everyone. She calls for using whole wheat pastry flour with cream and it works/tastes great. I usually add whatever I have on hand...fresh fruit, nuts, coconut, dried ginger, dried fruit. You can't go wrong really. If I remember I'll post the recipe tomorrow when I'm not supposed to be sleeping.

Whole Grain Strawberry Pop Tart Scones

makes 8 scones

Print this recipe!

 

Ingredients:

2 cups whole wheat pastry flour

1 T baking powder

1/2 tsp salt

1/2 cup sugar

6 T cold butter, sliced into small pieces

1 cup milk

1 vanilla bean, scraped (or two teaspoons vanilla extract)

1 cup chopped fresh strawberries

for icing:

1/2 cup powdered sugar

1 tsp milk

 

Directions:

Preheat oven to 425.

Mix together the vanilla bean seeds, strawberries and milk in a small bowl. Set aside.

In a large bowl, combine the flour, sugar, baking powder and salt. Cut in the butter and work mixture together with your fingertips until it reaches the consistency of sand.

Add the strawberries and milk to the dry ingredients and mix together until a shaggy, wet dough forms.

Pat dough into a large circle on a lined baking sheet and cut into eight pieces (like cutting a pie). Separate the pieces about an inch apart and bake for 16 minutes or until golden.

Let scones cool completely while you combine the powdered sugar and milk to make the icing.

Drizzle icing over scones and serve.

 

Time:

30 minutes

 

 

I have made these twice and they are great.  I put only1/4 sugar and skip the icing. You may could go down to 2 T if they are eating them with jam.

I got the recipe from this lady.... but couldn't figure out how to get them off the website properly.
