This is our first year doing anything for St Patrick's Day (we just got home from a vacation in Ireland). Â We're having guiness corned beef, colcannon, brown soda bread (a recipe a friend from Ireland shared with me that's been passed down in her family), and I'm not sure what we'll do for dessert yet. Â I think lamb stew with soda bread would be a great treat as well. . .mmmm, or the fish and chips. Â I had one dish in Ireland that was like colcannon with bacon rashers on top of it. . .it was my favorite thing I ate there. Â You could even do a traditional Irish Breakfast for dinner. . .that would be fun!
