Chinese, Indian, Thai? Something else?

I always go for Thai, which is pretty easy. I keep Thai Kitchen curry paste on hand, mix a bit w a can of coconut milk. Brown your onions in your pan, add your chicken cubes, give them a bit of color. Add any long-cooking veg (carrot, potato, etc), and your coconut milk. Bring to a boil and simmer 10-15 min. Add any quick cooking veg (peas, cherry tomato, etc), simmer another 5. Stir in a handful of fresh chopped Thai basil, some cilantro, and a splash of fish sauce to finish.

I am normally partial to Indian, but that seems so simple and delicious!

There are a million different ways to make Indian curries. What I do is just decide on the flavor profile I want to go for and then heat the oil, toss in the aromatics and when those are to the desired stage add the whole spices, once they have bloomed add the liquids, ground spices  and meat and veggies ( in Indian cooking the meat is often not browned first). Cook it on low and finish it off with fresh herbs. One popular combo here is turmeric, coriander, cumin, fenugreek, whole cardamom pods and cinnamon sticks with onion, garlic, ginger, fresh hot pepper and sometimes tomato.
