Quick breakfasts and lunch box ideas

Hello everyone!

 

I'd really like your help, as I start work tomorrow and I want to make sure I don't skip breakfast (we never had breakfasts as kids, so I'm not used to it) and ideas for what to pack in my lunch box.

 

About me: I don't eat meat, but I eat fish, eggs and dairy. I usually eat very healthy, always trying to be healthier. I rather sleep than eat breakfast, so nothing too complicated.

 

I've thought about having greek yogurt with granola, cereal with milk, instant oatmeal, some kind of sandwich, fruits. I don't know, I'm not really even that hungry so early (I need to leave the house by 6:45-7:00), but I function better if I eat something. 

 

I bought myself a goodbyn (lunch box ) so I have plenty of room to take food with me and it has all these little compartments. So far I've thought of bringing a sandwich, a fruit, some cut up celery with peanut butter or something like that. Leftover salad from dinner or tacos, wraps. I don't have any concrete ideas, but maybe if you share what you take to lunch or pack for your hubbies that would help me. I never really had a lunch box for lunch, just for a snack when I was very very young.

I think you have lots of good ideas.  I eat usually eat a pretty small breakfast as well.  I can often get away with just a banana and a string cheese (which are both very easy to eat in the car).  For lunch, I often do cottage cheese & yogurt mixed together or some crackers with sliced cheese.  Also, a handful of almonds or cashews provide a lot of great protein and help me with my salty craving in the late afternoon.

I made quiche or a frittata on Sunday so that we can have a piece in the morning over the next couple of days.

I have a hard time eating breakfast, but here is my new favorite:

 

In a small frying pan, heat a bit of olive oil.  Put in a handful of frozen hash browns, top with a handful or two of frozen spinach, and then crack an egg on top, salt and pepper.  Cover, lower heat, and cook until whites are solid and yolk is how you like it (I like it pretty solid).  When it's done you can lift the whole thing up with a spatula and slide it onto your place.  Yum.

I eat breakfast and lunch at work so most weeks I make a breakfast casserole (eggs, cheese, whatever veggies are around) and eat that every morning.  Oatmeal's pretty fast, as are egg sandwiches on english muffins.

 

Lunches for me are always leftovers or sandwiches.  Some weeks I make a big pot of soup or a big casserole and eat that every day.  Not exciting, but it works and it's pretty quick.
