Ideas for meals for a sick friend

Dh has a coworker who was recently diagnosed with cancer.  She and her family are vegetarian.  We would like to make a stash of meals that can be frozen, that the family could pull out and heat on nights she isn't up to cooking.

 

I am not a vegetarian and am coming up blank on meals that would work well this way, other than meatless lasagne and eggplant parm. 

 

I'd appreciate any ideas, preferably those without tofu.  I react badly to the sight and smell of tofu.

How about soups? Can you make some soups and deliver them with some nice bread? That is a meal that can be easily frozen and reheated.

 

Felafel batter can be made ahead and frozen - the balls can also be cooked and frozen so they just need to be reheated and served with pita and veggies.

 

Vegetarian pasta sauce and cheese sauces can be made ahead and frozen for the family to thaw and use when they want to and with whichever pasta they like.

 

Even just delivering a basket of fresh fruit, bread, crackers and cheese (if they are not vegetarian and not vegan) could be a huge help. Having snack foods around is just as important with kids and when someone is ill as having meals.

Quiches freeze well, as do frittatas and macaroni and cheese casseroles. Spanakopita is really a good one, as is shepherd's pie. If she's going through radiation, miso would be a good thing to have, here's a recipe for chickpea noodle soup with miso: http://www.livestrong.com/recipes/chickpea-noodle-soup-veganomicon/ . A favorite recipe of mine from my pre-vegan days was a pound of whole wheat penne, a jar of pasta sauce, 16 oz of cottage cheese, a 10 ounce bag each of frozen spinach and broccoli, mix it all together, add a cup of water, top with shredded mozzerella, bake 45 minutes at 350. I would serve half and freeze half.

 

Frozen low sugar whole grain muffins, especially hearty ones like peanut butter banana, would be good for breakfasts, so would homemade granola and breakfast burrito type things.
