Sunchokes/Jerusalem artichokes?

My mom harvested a huge grocery bag full of these for me last week.  Does anyone have any recipes that they like?  I have googled and came up with a few ideas, but I thought I'd ask here for any tried and true ways to cook them.

I ended up roasting them with poblanos, and I served them in burritos with kale, black beans, roasted chicken, and cilantro/onions/hot sauce/squeeze of lime.

 

Very good!

I still have a few pounds left, so I think dh is going to plant some, and I'll find something else to do with the rest.

We love them. They are great mashed or roasted or sauteed with garlic. Today we had some pureed and added to risotto.

Since you had some left, I hope it's not too late to post a recipe I really enjoy - Cream of Jerusalem Artichoke Soup. It's very rich and filling, but very easy.

 

2 Tbsp. butter

2 tsp. chopped garlic

1/3 cup chopped onion

1 lb. Jerusalem artichokes, washed, sliced 1/4 in. thick (I also peeled them, since sometimes they can be bitter if unpeeled)

2 cups chicken stock

1 cup cream

salt and pepper

Chives or parsley to garnish. 

 

 

Melt the butter, add onion and saute until softens a little. Add garlic and saute about 1 min. Add the artichokes and saute about 2 min. Add stock, boil and then turn down to simmer until the chokes are tender. Add the cream. Puree in a blender until smooth. Add salt and pepper to taste. Strain through a fine sieve. Serve garnished with chives or parsley.
