Help!! Meals that can be cooked with just an oven (a small oven!)

Due to some apartment code craziness (see my thread in TAO for the whole story), my landlady took the stove out of my apartment. We're going to be moving ASAP, but we're probably stuck here for at least a few more weeks and I still need to feed myself (and my fiance...thankfully we don't have any babies or kids to feed yet!).

 

Here's a list of appliances I have at my disposal:

-a small countertop oven (think super fancy toaster oven) that I can bake anything short of a turkey in.

-a small rice cooker (I've only ever used it for rice)

-a 1 burner induction cooktop the landlady brought over, however, it only functions with certain pots/pans...the only one I have that works is a 6-qt stockpot.

-a 15yr old crappy microwave

 

We generally eat homemade dinners 5-6 nights a week, but nearly everything in my repertoire requires use of the stove (and usually my skillet, the aforementioned stockpot isn't super useful!). The only things I have come up with are homemade pizza, salmon or chicken (using the oven) with rice, a pot of soup, and quiche. I'd also be happy to resort to my guilty pleasure stand by of Bell & Evans chicken fingers and french fries. I'd appreciate any other ideas anyone might have! (we eat pretty much anything, though I will say that raw things like salads are generally out due to tummy issues). Thanks!!

I have made a lasagna with oven-ready noodles, just layer and bake.  It was easy and great.

 

For a yummy side dish, place cut-up veggies such as broccoli and califlower on a baking tray.  Drizzle with olive oil.  Sprinkle with french onion soup mix.  Bake for 1 hour at 300 degrees.

We make lots of stuff in our toaster oven--roasted veggies, chicken tenders, meat balls--basically anything you'd make in a regular oven, we just downsize (or stuff!) into the toaster oven.

Braises work well.  You can brown things ahead of time, but you don't have to. 

I happen to have a small cast iron pot that fits into my toaster oven.  I'll use that for stuff like chicken thighs, pot roast, venison, pork roast.  ANything that can be cooked low and slow with some liquid. 

 

As a plus, you can use the leftover meat on top of nachos, inside burritos (microwave the tortillas to soften, then stuff with leftover meat, rice, canned beans, and heat the whole shebang in the oven).  Use corn tortillas and cover with enchilada sauce (just canned) to make those.

Quesadillas

 

Grilled cheese (turns out a bit crunchier, but still good)

 

Spaghetti squash bake (roast the squash, then spread out in pie pan and top with sauce & cheese and warm until heated through)

 

Oven fries or oven nachos (top either with beans, cheese, veggies, salsa, whatever - with certain toppings it's filling enough for a meal)

 

Savory bread puddings

 

 

** if you can borrow an electric skillet -- that can be very useful (more than the burner has ended up being) we managed a month or two with that, a microwave, and toaster oven.

Jacket potatoes work with lots of toppings.

Curries and spaghetti sauce type things work OK in an oven, I prefer being able to brown the meat first but if I'm short on time it all gets stuck in a dish in the oven. Try looking for slow cooker recipies.

casseroles would work well in a toaster oven:

  • lasagna
  • chicken and rice
  • enchiladas
  • shepards pie
  • mousakka

 

I would think you could cook chicken breasts, small pork chops, steaks and the like. Acorn squash would be good too, topped with butter and brown sugar.
