Ideally you want to make all whole grain sourdough bread from soaked or sprouted flour. You can buy sprouted flour online which gets you around the soaking conundrum, from what I understand. Personally, I have found the "5 minute artisan bread" method to be a great way to get in the habit of making bread throughout the week. The authors have a new book called "Healthy Bread in 5 min/day". Because the method has a really long rise/storage time (24 hr to 2wks), I believe that qualifies as soaked :D Sourdough is the way to go for TF (I guess coz it helps you digest), and I dont know much abt that, but the 5min bread authors have info abt adapting their recipes to use with a sourdough starter--I think because the 5min method is so super-easy, it's worth checking out for getting into the habit of making all your family's bread (we love it! esp because you can use the same dough for flatbread, pizza, pitas, etc). The original recipe is not all whole wheat, tho there are one or two ww recipes in the book, and the 2nd book has more--also I think you can experiment w/ subbing spelt for the white flour or doing 1/2 spelt, 1/2 ww along w/ the sourdough starter--that's my plan anyway!
My fam is taking a break from bread while we transition to an omni tf diet, and then I'm going to start adapting our beloved 5min bread to be more ww and sourdough.
