Need food inspiration!

Thread Starter

6 weeks pregnant, morning sickness kicking my butt. My husband is super picky and my toddler is almost just as bad. We're vegetarian (I do eggs, DH and DD do not and DD is allergic to nuts) yet we're strangely adverse to most raw veggies and usually stick with the "standard" mixed veggie fare. I'm still nursing DD and between that and the food aversions, I'm so wiped out! We tend to like typical southern, greasy spoon type food as well as italian and tex-mex.

I need some ideas for healthy meals that are easy to make, cheap and will make everyone happy. I'm determined to eat better this pregnancy!

I don't have too many suggestions but, I know how hard it can be to eat well with food adversions. I was thinking since you said you guys like Tex-Mex you could make black bean tacos with avocado, corn and tomatoes. Its pretty cheap and good. I would love to eat this but I cannot stand any type of beans with this pregnancy.

A favorite around here :)

Honey Baked Lentils

1 cup lentils (I use red)

2 cups water
2 tbsp honey (or maple syrup)
2 tbsp soysauce or tamari
2 tbsp olive oil
1/2 tsp ginger
1 clove garlic
1 small onion
salt & pepper to taste

Bake in a covered dish at 350 until tender (about an hour and a half).
