Need cooked fruit ideas

Because of oral allergy syndrome there are a lot of fruits I can't eat raw. With a few fruits, my reaction is strong enough that I now carry an Epi-Pen in case I accidentally get a bite or two of a serious offender. The fruits I CAN eat raw are berries, melons, citrus and grapes. As far as I know, everything else is out, unless cooked in some way.

 

So my request is ideas for cooking fruits, but not so much in breads/muffins, cakes and such--unless you have a fantabulous recipe you just have to share.love.gif I made a chunky applesauce thing recently and also did sauteed apples to put over pancakes last week (saute in butter, add a bit of brown sugar when they're cooked enough). I want to try other fruits like pears, nectarines, plums and more, but what can I do with them? I don't mind using some sugar.

- You can make most fruits like the sauteed apples as toppings for desserts...peaches, pears, bananas, mango would all be good to put on pancakes, ice cream, or on cake
- fruit compute, which you could eat plain
- I would also look up recipes for savory dishes using fruit in the sauce, to go with chicken or a roasted meat...I have seen sauces done with apple (goes well with pork), citrus (chicken) or even berries
- you could also make a cooked salsa-type topping with pineapple or mango to put over grilled fish
- if you like to eat curry, you can also make fruit chutney as a yummy condiment

You can grill fruit - even indoors with a grill pan or griddle.  Sray or brush with some oil.  Sprinkle on a little sugar if you want (but not really needed b/c cooked fruit gets pretty sweet), any spices you might want, then grill for a few minutes per side till browned.  Good ones to try:

peaches/nectarines

pineapple

plums

bananas

Poached pears, I like to peel them but leave them whole. For poaching liquid I usually used water with a little sugar, cinnamon and citrus peel added. Cook on a low heat until soft. Peaches or nectarines are nice like this too.

 

Baked apples. I use an apple corer to take out the centre. Then stuff the hole with dried fruits, then add a knob of butter to the top of each apple. I have no idea what temperature they are supposed to be cooked at as I just stick them in with whatever else is in the oven. If it's particularly hot I'll cover them with foil.

 

Plums are nice stewed and served with greek yoghurt. Actually this is what happens to any fruit that's getting a little soft in our house.
