I baked these muffins  this morning and they came out quite nicely. I recommend them hot out of the oven with a cup of tea or coffee . . .

Those would work for my DD except for the grapeseed oil and blueberries. I could sub. the blueberries but could I sub the grapeseed oil?

Well, I don't know what has to be avoided, but any oil is fine, butter would be fine ( just melt it) even mashed banana may work. An extra egg could be the solution. A little trial and error, but you want the moisture level to stay equal. Good luck, and let my know what you end up with smile.gif
