What are your favorite healthy cookie recipes?

I find myself making the same two kinds of cookies over and over again: Chocolate Chip and Oatmeal Raisin. Adding variety would please everyone!  What are your favorite healthy cookie recipes?

Not so much a cookie cookie, but we have been really enjoying these:

 

1 cup powdered milk

1/2 cup peanut/other nut butter

1/2 cup honey

 

Stir above until well blended, rolled into balls and coated in flax meal and unsweetened coconut. Chill to firm and enjoy!

We have also added chopped raisins with delicious results.

I just made some of these this morning!

 

Pumpkin cookies

 

1 stick butter, softened

1 C sugar

1 egg

1 tsp vanilla

I C pumpkin or squash

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp salt

1 tsp baking soda

1 tsp baking powder

2 1/2 C whole grain flour (spelt, whole wheat, even rye)

nuts, fruits, flax seed, choc chips

 

Cream together the butter and sugar, then add the egg and pumpkin. Gradually add the rest of the ingredients and mix well. Throw in whatever you have around.  I just made some with cranberries, chocolate chips, walnuts and pecans, and flax seed.  Bake at 350 for 12-15 minutes. It depends on how big you make them. They are very dense with the whole grain. They are great even without adding fruits and nuts!

This is my FAVORITE recipe! If you didn't know any better you'd think they were bad for you!

 

You use coconut oil instead of butter and I've recently learned you can substitute flaxmeal + water for the egg. Skip the chocolate chips if you truly want to be good. Very versatile and feel free to add in anything else you can think of (wheat germ?) DELICIOUS!

I love the recipes at Heavenly Homemakers!  Here's a yummy snickerdoodle one!

 

Snickerdoodles

1/2 cup butter, melted
1 cup sucanat or rapadura
1 egg
1/2 teaspoon vanilla
1/4 teaspoon baking soda
1/4 teaspoon cream of tartar
1 1/2 cups whole wheat flour
2 Tablespoons sucanat mixed with 2 teaspoons cinnamon

 

Stir together melted butter and sucanat.  Add egg, vanilla, baking soda and cream of tartar, stirring well.  Mix in flour.  Cover bowl and chill dough in refrigerator for one hour.  Roll dough into one inch balls.  Roll balls in the sucanat/cinnamon mixture.  Place balls about two inches apart on a cookie sheet.  Bake at 350° for 10 minutes or until the cookies are golden brown.

Here is one we like

BREAKFAST COOKIES

2 cups butter
2 cups light brown sugar
1/4 cup milk or juice
4 eggs
4 cups flour
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
2 cups shredded carrots
1 cup pumpkin or sweet potato
2 cups oats (quick or old fashioned, not instant)
1 cup chopped nuts (optional)
1 cup chocolate chips (optional)
1 cup shredded coconut (optional)
1 cup shredded cheese (optional)

Heat oven to 350°. Place sheets of foil on counter for cooling cookies. Combine butter and brown sugar in a large bowl. Beat at medium speed of electric mixer until well blended. Beat in milk or juice and eggs. Combine flour, baking soda, cinnamon, and salt. Add to creamed mixture at low speed until just blended. With a sturdy spoon, stir in oats, carrots, pumpkin, nuts, chocolate chips, coconut, and cheese. Drop by rounded teaspoonfuls onto baking sheet, 2 inches apart. Bake for 12-14 minutes, or until edges are golden brown. Cool 2 minutes on baking sheet. Remove to foil to cool completely.

I want to try these! But, this looks like a big recipe. How many (roughly) cookies does it make?

~Spicy Oatmeal Raisin Raspberry Chip Cookies~

 

1/2 cup butter, softened

scant 1/2 cup coconut oil

1 cup packed brown sugar

1/2 cup raw cane sugar

2 eggs

1 tsp. vanilla

3/4 cup white wheat flour

3/4 cup unbleached all purpose flour

1 tsp. baking soda

1 tsp. ground cinnamon

1/2 tsp. ground cloves

1/2 tsp. salt

3 cups rolled oats

1 cup raisins

3/4 cup raspberry chocolate chips

 

Preheat oven to 350.

In a large bowl or mixer cream butter, coconut oil, brown sugar, raw sugar, eggs, and vanilla til smooth. Combine flour, baking soda, cinnamon, cloves, and salt; stir into the sugar mixture.

Stir in the oats, raisins, and raspberry chips. Drop by rounded teaspoonfuls onto ungreased cookie sheets.

Bake 10-12 minutes until lightly golden. Do not overbake! Let them cool for 2mins before removing from cookie sheets to cool completely. Store in airtight container.

 Here's my favorite cookie recipe.  I have allergies to eggs, wheat and peanuts and we generally eat healthy.  Baking can be a challenge to say the least, but these Oatmeal Cookies come out great every time.  I've even substituted the brown sugar with sucanat to make them a little healthier.   When you make them with dark chocolate chips and dried cranberries you've got 3 of the "12 best foods" in one dessert!

Amazing Healthy and Gluten-Free Cookies!

 

Mix wet ingredients together
1 cup coconut oil or butter
1 cup honey
1 tsp. vanilla
2 eggs
1 can garbanzo beans (drained, rinsed, and blended until smooth)

Sift dry:
1 cup arrowroot
3/4 cup coconut flour
2 tsp xanthan gum
2 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp sea salt.

Mix wet and dry.

Add 1 cup extras (nuts, chocolate chips, raisins, coconut, dried fruit, etc.) or just leave them plain.

Roll into little balls and put on a baking sheet.  Bake at 350 for 15-20 minutes.

Sunflower Seed Butter Cookies (ALLERGEN (top 8) FREE)

 

3/4 cup of sunflower seed butter
3/4 cup of sugar (I use organic evaporated cane juice)
1/4 cup of brown sugar (same as above)
1/2 smashed ripe banana
1 tablespoon olive oil
2 tablespoons hemp milk
3/4 cup of buckwheat flour (I use arrowhead mills)(you could use another flour I'm sure but buckwheat is so good for you, it's not even technically a grain)
1/4 tsp of aluminum free baking soda

Cream together sunflower seed butter (I use trader joe's), sugar, smashed banana, olive oil, and hemp milk. Sift together buckwheat flour and baking soda and slowly mix in to wet ingredients.

Pause to wipe a hiney - oh, that's just me? Okay then.

Drop by the rounded tablespoon onto parchment lined baking sheet and criss cross with a fork. Bake at 350 degrees for 18 - 20 minutes.

I am on a mission to start cooking healthier. I am taking it slow and learning what we should avoid and what we should add to our diet. I found this recipe for cc cookies using whole wheat flour. The cookies are not completely healthy, but considering my old recipe, they are much better for us!
