What are you cooking for Easter?

I need to get a menu picked. Can't decide between ham or lamb. I'm leaning towards ham because we eat lamb on a regular basis unlike ham.

 

I need some side dishes though. Ham and biscuits. Hmm have to think about it.

 

What are you making?

I am making a spiral honey ham

candied sweet potatoes

green bean casserole

maybe mashed white potatoes or sweet potatoes

rolls

and probably corn or asparagus.

Mom is making a Ham and between the rest of us there will be baked macaroni and cheese, homemade boston baked beans, potato salad, cole slaw, rolls, garden salad, and probably birthday cake for dessert.  I'm not sure if anything else is being brought (there will be 22 of us) but that should cover it for the main meal.  It is heavy on the starches, but it's a holiday so I'm not worried about it.

Leg of Lamb.  It's pretty traditional in dh's culture and we need to clear out space for the whole lamb we'll get in June.  I prepare it very traditionally with garlic and rosemary (which are coming up in my garden).  It's quite "spring"-like.  I tend to think of ham as being "fall"-like because that's when my family butchered hogs and smoked them.  We eat a lot of lamb, but don't eat leg of lamb very often... particularly when it's roasted.

 

Side dishes will probably be spring greens and asparagus.  There is a nice Turkish side dish we like to make with rice, currants, chicken liver, and dill.  This is a festive dish in dh's culture, as well.  We celebrate easter as a secular holiday for the coming of spring and not a religious holiday (kind of like xmas)

There will be 12 of us.  Menu will be: 

 

baby spinach salad with strawberries, red onion, and goat cheese

Pork loin roast wrapped in pancetta

grilled asparagus

potato/apple/onion gratin (my aunt is bringing)

broccoli strata (my husband is vegetarian)

 

ice cream cake for dessert as it is also my DD's "family" birthday party.

We're doing a turkey, because I had one in the freezer, but we're also doing a small ham.

 

Sides are

 

Stuffing

Roast potatoes/sweet potatoes

Brussels sprouts

Raw veggie tray

Cranberry jelly

 

We're also making strawberry shortcake for dessert.

 

There are only eight of us - my immediate family, plus mom and my stepdad. We'll have lots of leftovers, but we're all okay with that!

 

 

When I do just a ham - no turkey - I usually make scalloped potatoes for the side dish, and then whatever green veggie crosses my mind (usually seems to be asparagus, for some reason) and either a salad or veggies sticks...or both.

We are having a huge ham, sweet potatoes, fresh green beans, glazed carrots, biscuits, and sparkling cider. 

 

eta: forgot the cheesecake - how could I forget that?

I just decided on our menu yesterday.

 

ham

scalloped potatoes

green salad

parmesean roasted green beans

rolls

deviled eggs
