Okay, so I know that people have been making yogurt for millennia before me and it was never an exact science....however...I am a little funny about going exactly by the recipe when it involves dairy products sitting out of refrigeration!!
So according to the recipe I was supposed to have the milk in the crockpot on low for 2 and a half hours, then unplug it and let it sit without lifting the lid or messing with it in any way for 3 hours, then stir in the yogurt I was using as starter and wrap it with a towel and let it sit another 8 hours and then it'd be yogurt.
What actually happened is I lost track of the time...so the crockpot was on for a little over 3 hours before I unplugged it. Then I fell asleep about 20 minutes before I was supposed to stir in the starter...so it was sitting there for 5 hours before the starter was mixed in (I figured if I'd wasted the milk anyway, I was okay with wasting a half cup of yogurt just in case it turned out okay). So yeah, then after that it only sat for about 7 and a half hours...but I was afraid to leave it sitting out for much longer (since it had been like 15 hours since I started the process) so I dished it up into a couple containers and stuck it in the fridge.
It did firm up like yogurt should...though a bit on the runny side like homemade undrained yogurt normally is. I haven't tasted it yet though and just gave LO some of what was left in the bought container for his breakfast.
Should it still be okay? Or should I toss it, buy a small container of plain yogurt for fresh starter (since LO just killed off the last of the bought stuff), and try again today?
