As far as apple, I knew DD was ready for regular apple when she grabbed a semi sweet apple off my mom's apple tree at about 18 months and started eating it in delight...

Now at 22 months she LOVES apple as a snack although I do slice it and take the skin off to make it easier for her.
Her issue, as with a lot of feed she eats is that she stuffs her face without swallowing until she has so much in cheek that she spits it out on the floor and calls the dog over to eat it, blech...So gross when it is half chewed meat that has been in her cheek for 20 minutes...
Anyway, she really likes apple and I still give it to her and just try to urge her to chew after each bite...Easier said than done..

Apple is way WAY softer than carrot though. DD can take a bite of carrot with ease but has a harder time chewing it I think.
at the bolded! This is my 19mo ds, totally!

Anyway, I've been giving ds raw apples, sliced or whole, and baby carrots for months. He has his "one year molars" (bicuspids) but not the second set yet. He used to eat apples pretty well, but now he just chews them up and spits them out, usually while walking around the house. I am usually crouching down in the kitchen trying not to laugh out loud at the farting noises he makes as he spits apple everywhere. After cleaning it up so many times, I don't know why I still think it's funny. Anyway, he doesn't really eat either, but he doesn't choke on them, and he likes them, so if dd's having an apple and ds wants one, I let him have it.

I remember giving dd chunks of peeled raw apple to chew on before a year, maybe 9 or 10 months (she had 8 teeth by 8 months). She gagged on it a lot, but loved it.

Oh, and poop...well, you can still tell some things, like blueberry skins, black bean skins, etc. If he eats a lot of yams, it's gonna be orange, etc. But he is definitely digesting things more now than when he started solids (or at least chewing them more).
