Yesterday we had taco salads for dinner.. Tonight we are doing leftovers or nachos depending on the mood of the little ones.. Hubby has duty so low key is the term for the meals today

Mmm, haven't made salmon in a while. I love it rubbed with salt, sugar, and dill and grilled on a cedar plank. : )

 

Tonight we're having refried beans, chicken taquitos, and Mexican rice. I am making about 4 lbs of beans and freezing them.

We did breakfast for dinner - pancakes and sausage. It was good. The weather has finally moderated here, so I'm hoping we can grill out this weekend though!

Grilling, yum! I did that last Sat. Hubby was HAPPY when he came home! Tonight, he'll be pleased, and so will I. It's easy. Corn dogs, left over potato salad, and if I feel like it, fries. :)

Ha, well I wanted to grill so badly but now I've got a major craving for bacon and whiskey chili, so we're doing that instead. Go figure. But we'll likely grill tomorrow, especially after we have fresh veg from the farmer's market.

Tonight I made rosemary & sage chicken with apples.  It was super juicy and tasty.  It was paired with basmati rice & roasted carrots, onions, & baby portebella w/ thyme.   Mmmmmmmm

Anonymous white fish, stir fried w/  ginger, garlic, Guilin chili paste, green onions, and maybe a dash of fish sauce.

Yesterday we ordered a Monster Pizza (yes, it was a monster, the thing was HUGE) so tonight we are doing leftovers. Tomorrow night I have to see, I want to figure out something to do in the crock pot since we will be at the beach most of the day.

Wow, you all just keep on giving! This is such a great thread. I am having such a hard time cooking in this heat, just no motivation or ideas. And, we can't grill here because of fire danger. Looking for cold soups. Last week I made cucumber gazpacho with 3 peeled cucs, yogurt, lime juice, cilantro, a touch of sugar, salt and topped with sprigs of mint. Very cooling. This week I'm looking to make watermelon soup.

I made a cold strawberry soup this week with greek yogurt, cream and mint. It was so refreshing in this thick air heat we're having.

Champagne chicken with shallots and mushrooms, parmesan couscous, asparagus, strawberries

 

We've been in summertime mode here, so lots of simple salmon and turkey burger dinners and using the grill, lots of grilled corn and big salads. I have finally figured out how to grill baby back ribs, so we have been doing that quite a bit. Our garden is bumping, I need to got out and do another greens harvest before the lettuce and spinach get too big.

We had a heavy one here tonight, but it wasn't bad. Spaghetti with GF pasta. We had chicken and rice the night before and taco salad the night before that. That's a great one for the heat. I'd made the taco meat earlier when it was cool. :) I put our fresh romaine, my in-law's kale, store spinach, and garden herbs for a kick. It's just hubby and I so I saved on dishes (sink's in the hot west window so I wanted to do as few as possible!) I made it in my 2.5 qt glass bowl and got out two forks. : D

I have not been on here in awhile - summer is so busy! Have to get out while it's nice and all that. The last two nights in a row we had pasta shells with Newman's Own pasta sauce. We never eat bottled pasta sauce since I always make it, but my mother in law sent us home with some, and I admit - it was a lifesaver in this heat wave. All I had to do was boil water and not heat up the house. And it was fairly good, for bottled sauce. 

 

Today we had pasta salad and croissants - another cool one. Tomorrow we plan to grill burgers with some friends. I'll probably make some potato salad to go alongside, and maybe a little green salad too - I've got some arugula, green onions and another tomato to use up. And maybe a little shredded carrot. And then my five day vacation is over. :-(

We had shepherd pie using leftover chicken, previously cooked and frozen pinto beans, frozen organic veggies, nutritional yeast gravy, and leftover mashed potato/carrot mix for topping. It was good! Also managed to spread out those leftovers into pie pans, so I have four for the freezer! Whoot!

Alongside, we made a huge batch of "spanish" brown rice (first time trying my mom's recipe) using chicken livers, lots of spices, bacon, and tomato sauce--It was my first time attempting liver (they were gifted to me from a farmer down the street), and I was amazed at how tasty this recipe came out.

I'm just really happy to have made two yummy dishes the fam liked and have lots of extras to freeze for easy meals another time joy.gif

Bbq baby back ribs (3 slabs)

hot dogs

grilled zucchini, yellow squash, asparagus, onions, red and green bell pepper

corn on the cob

loaded potato salad

CP bbq beans

shells with olive oil and parm cheese (kids)

tortilla chips, fresh salsa, and guacamole

baby carrots, celery, cucumbers, and ranch

watermelon

rice krispie treats with sprinkles

smores on the backyard fire pit

light margaritas, beer, pinot grigio

lots of fireworks!

 

I have 9 adults and 9 kids to feed, so it's a feast and I need to get motivated!
