We are having organic homemade sloppy joes on whole wheat buns, mashedsavory sweet potatoes and green peas.

We dont eat much bread, and wish there were some other option for this, but other than potatoes, im clueless.

Nope, no sloppy joes. Change of plans. We had shrimp tacos on ancient grain tortillas, with baby romaine, guacamole made with unrefined coconut oil and apple cider vinegar, pico de gallo and sour cream/ sirracha sauce.

Was so good.

We've got a pot roast finishing up in the crockpot. Just did it with a cherry wheat ale, potatoes, onions, thyme, parsley, salt and pepper. Made a gravy from the cooking liquid and a little dijon mustard, plus we'll have croissants alongside.

Roasting a whole chicken stuffed with cornbread stuffing, mashed gold potatoes, butternut squash mashed with butter and cinnamon, gravy, steamed broccoli and biscuits. 

 

On the menu this week:

Skillet lasagna (yes, still haven't had it!), garlic bread, broccoli

Pork chops, roasted sweet and gold potatoes, brussels sprouts

Fish tacos, black beans, salad

Turkey burgers, oven fries, salad

Breakfast for dinner: waffles, eggs, bacon, fruit

CP bbq chicken, wild rice, sauteed zucchini and onions

Monday nights dinner is going to be chicken with stuffing (a crockpot meal).. Tuesdays will most likely be salsa chicken (another crockpot meal).. I love my crockpot!

Tonight we had BLTs. I could totally eat another but I'm saving it for tomorrow's lunch. Lol

Cheese ravioli, corn and peas tonight. Yum!

 

Tomorrow will be pizza and salad with friends.

 

The rest of the week's menu:

Kidney beans and rice, and corn 

Mac and cheese casserole and carrots

Mock chicken sandwiches and oven fries

Sweet potato, black bean, and mango salsa burritos

 

Not sure what next weekend will be, because it's DH's birthday and he hasn't made a request yet!

tonight we had lemon chicken with gravy over rice, and salad on the side... last night was endless shrimp from red lobster... im still full, lol. friday we had steaks, baked potatoes, and salad. tomorrow, im not sure yet...maybe pork chops. i've got a list on the fridge, just havent decided yet

I ended up with a mini mental meltdown last night so we ordered pizza.. Oops bag.gif Is it bad that I don't feel at all guilty??

 

Tonight hubby asked for the salsa chicken so I need to go throw that in soon

Nope! Sometimes sanity and being able to relax is more important than cooking. :-)

 

Tonight I'm on the opposite end of the spectrum though - we're having a late dinner in awhile because I wanted to make coq au vin. The house smells amazing - it's going to be worth the wait!

Last night I made baked pasta with home made sauce (Pureed mushrooms, carrots, zuchini, & tomatoes), tossed with cooked pasta, lots of cheese sprinkled on top and baked for 15 mins in the oven.  Mmmm

  Tonight we are having left overs. Baked pasta, chicken curry, and cheesy polenta cooked with lobster stock.  Interesting combination... maybe I will throw in garden salad for some freshness. :-D

This week:

May switch out the lettuce wraps for bibimbap tonight, since we used up the cucumbers, and I don't have any limes for the other sauce.

My version will be brown rice + marinated chicken + edamame (for the non-chicken eaters) + shiitakes + carrots + spinach + gochujang + topped with fried eggs.

Thanks for that Bibimbap link, what a cool dish. I've been eating some Vietnamese food out recently and this reminds me of one of their dishes. I like dishes that one can just layer like this and add sauces to.

 

Last night I had gluten free spaghetti with sauteed eggplant, yellow squash, zucchini, onions, and tomatoes, Butter and grated Romano. Salad with fresh tomatoes, raw carrot spears and thousand island dressing.

Last night after the party we ordered Thai food since we were so exhausted. Pretty good - this place has a super small menu, but everything we got was really good. Better than I expected actually. Husband got pad thai, and I had beef pepper steak and chicken soup, with rice noodles. We split an order of egg noodles. So there is hope for the suburban restaurant scene. 

 

Sunday dinner tonight, so we did a big spicy glazed meatloaf and mashed potatoes. Comfort food after a busy, hectic weekend.

Not at all! I plan things like that for days I do shopping. We're about 35 miles from the main town, so I go twice a month and it wears this girl out. We had cardboard pizza when we got home. My consolation/justification is that it was on sale. love.gif

Tonight... well, tonight so far all he ate was, get this. Pop, chips and gummy worms. The gummy worms are all that made it home. He had to run in to Lowes for some parts for his shed-in-progress and I guess he was hungry. Lol I succumbed to the gummys too. My weakness, though these weren't fabulous.

 

When it gets dark in a couple hours and he comes in, I have chicken rice casserole made and ready. Yesterday was my take on the old Chicken Ranch Wraps I used to get from the Wild Oats in Tulsa before they were bought out by Whole Foods. (irked.gif)  Grilled chicken (left over from Saturday), peppered bacon (or in this case, I put pepper on the bacon since they didn't have any nitrate free peppered bacon around here), tomatoes from the garden, lettuce (from the store since the earwigs ate over half my crop), ranch dressing, a sprinkle of cheese, and chipoltle sauce (the adobo sauce from canned chipotle peppers in mayo, you can sometimes find it premade with mayos and dressings), all rolled into a big burrito size tortilla. Mmm Goood! luxlove.gif

Tonight husband made Italian sausage and pasta with marinara. Pretty tasty and a nice quick meal for a Monday night.

I feel so behind this week, I usually check in on the weekend!

 

Tonight is a beef roast in the CP with an onion and mushroom gravy, roasted sweet and red potatoes and brussels sprouts, broccoli and pears for kids

 

On the menu this week:

Breakfast for dinner for the kids, indian curry with shrimp, veggies, sweet potatoes and chick peas with rice for adults

Pork chops, rice pilaf, sauteed zucchini and onion

CP chicken cacciatore, sauteed spinach, wheat pasta

CP bbq whole chicken, rice pilaf, broccoli

Fish tacos, black beans, salad

Turkey burgers, oven fries, salad

Steaks, roasted potatoes and brussels sprouts
