Pasta with breaded tofu (sadly didn't have the crispies yet so used flour and nut yeast), cabbage, olives and a sour miso sauce. I'm so glad we get our csa tomorrow because I'm sick of cabbage and that's all we have left!

Tonight, probably quesadillas and tortilla chips. I shop every two weeks and shopping is tomorrow so I don't want left overs. If there's anything else random in there, I'll pull it out for lunch. :)  Tomorrow, baked potatoes with everything I can find on them.

We had black beans and rice and then mint chocolate chip ice cream MMMMMM! Kids picked since DH is away.

Well we ended up doing sandwiches and the rest of the split pea soup last night (my parents came over with Wawa sandwiches, yum). Tonight I made the salmon and sauce with roasted fennel and red onion, and spinach with mushrooms. As I was dishing it out, I dropped one full plate (half of the food) on the floor duh.gifgloomy.gif ARRGHHH! We ended up splitting what was left and how at 9:30 pm I'm making butternut squash soup.

 

Tomorrow is a twist on Shepard's pie with ground turkey, peas, and sweet potatoes. Or CP spinach lasagna, I'm not sure yet.

Good, glad you found it useful. I was doing it totally wrong until a few years ago too - I mean really, who intuitively thinks to hold a knife like that, along the blade? Not me at least! But once you start doing it, you've got so much more control, and then you can cut more quickly, and then you're a pro. :-)

Hahahaha I swear - they were fish sticks from a box and some random generic "Idaho potatoes". And they were good! Sometimes the best thing you can eat for dinner is what's quick, filling and cheap. :-) Being a goddess is hard work, dang it! Sometimes we need to take days off. ;-)

Put the crispies on your next shopping list! But what the heck is nut yeast? I've never heard of that - I am intrigued. 

 

Tonight we had - and McGucks you're going to love this - Panda Express take out. And we purchased it from a tollway oasis rest stop Panda Express. Ha! I got Shanghai beef (or whatever it was called) with an egg roll and potstickers, and husband got sweet fire chicken with spring rolls. I had a dentist appointment back in the city after work so it was late driving home to the burbs, so tollway takeout it was!

Nut yeast is my shorthand for nutritional yeast. If you haven't heard of it it's basically inactive dry yeast, is yellow, and comes in flakes or powder. It's used in vegan recipes a lot to replace a cheese flavor and has a lot of B vitamins in it. I think it's delicious and use it in a lot of recipes, or sometimes just shake some on top of noodles. It's also fabulous as a popcorn topper!

 

Tonight I made roasted potatoes (with a balsamic/mustard/miso glaze), rubbed kale, and mushrooms and veggie sausage stir-fried in bragg's. Our CSA was good to us this week! We got a bag of large beets and I'm not sure what to do with them. I like a small amount of shredded beets in salad and my family makes barszcz (borscht) on xmas but other than that I'm at a loss. I might try to pickle them?

Oh and FYI we always stop at the Oasis when headed back to Chicago (we live in Madison). Some decent dining options!

I recently made roasted beets tossed a bit of EVOO and 2 tbsp of balsamic vinegar and they were very tasty eat.gif

You could try the beets thinly sliced on a flat bread or pizza.

 

Tonight is crockpot ginger cranberry pork, green beans and quinoa.

Prepped for the upcoming week, including an online grocery order for the day after we move into our new home!

 

Saturday: Out for Italian (enjoy the old neighborhood one last time!)

Sunday: Chickpea curry

Monday: Mac and cheese casserole

Tuesday: Pizza (moving day, pick up in new neighborhood)

Wednesday: Mock chicken and waffle fries

Thursday: Gnocchi and sweet potato

Friday:Black bean-mango tacos

Oh heh, yeah I have heard of that. I was thinking it had something to do with actual nuts, which was a bit perplexing to me. Nutritional yeast makes much more sense. 

 

We had a long weekend with family on lake house vacation so not a lot of home cooking. Friday night we went out for all you can eat fish fry with cod, fries, coleslaw, mayonnaise-based potato salad and beer. Saturday night we grilled out at the lake - burgers, bratwursts, baked beans, my home made vinaigrette potato salad, chips and dips and beer or wine. 

 

We're back home now so for dinner we've got a spicy glazed meatloaf in the oven. We're going to eat the last of the vinaigrette potato salad with it. 

 

Tomorrow night we're doing a corned beef with potatoes and carrots in the crockpot, for something a little different.

I think esp if you make your own cream of and even sour cream (cheesemaking.com has starters and I would totally splurge and get the Yogotherm) it would be simple enough to do. Good luck!

 

Tonight I made stuffed crust pizza. I made two regular ones and froze for meals when I'm down after the baby's born.

My MIL had a great idea to stuff it easy. Cheese sticks rolled in the crust before you let it rise. So simple! I used half sticks just to cut down on the TOO MUCH CHEESE thing and bc I only had enough for that. Lol Hubby loved it though didn't noticed it was stuffed till AFTER he ate it and said it was good. Then I told him. Lol! Nice to have him notice the little things. It was pretty cool so the cheese wasn't stringy anymore or I'm sure he'd noticed it.

And tonight, just to talk to myself, we had Club Wraps. Basically nice sandwiches with bacon but in a tortilla. Very filling and not too heavy.

Tonight is leftovers.  DH is having chili and cornbread left from last night's dinner.  I'll either have spaghetti or a spinach salad with sliced grilled chicken..DD will have some of the grilled chicken, maybe some pasta with butter.  I'll also make some oven sweet potato fries. Everything but the sweet potatos and pasta are alreay cooked and in the fridge.

I kind of love leftovers night - it's like your own secret mystery basket challenge, like on the cooking competition tv shows. Not that I watch tv... :-) 

 

We did leftovers tonight too. We had pork chops and egg noodles for dinner last night, so I reincarnated it as bamee noodles with barbecue pork. Wasn't fully traditional barbecue pork in the Chinese style, but my husband did season some pork chops with five spice so I figured close enough. I did some Asian egg noodles in a beef/garlic/scallions/carrots/five spice broth and diced up one of the leftover chops and threw it in. Pretty tasty and close enough to the real deal. 

 

Monday night we had corned beef with potatoes and carrots in the crockpot and that was fantastic. We tried a new brand of corned beef and were pretty impressed with it. So tomorrow for lunch leftovers we've got a portion of the corned beef and a single pork chops with egg noodles. Love those dishes that just stretch out for a few days!

 

I've got dry kidney and pinto beans to soak overnight for bacon and whiskey chili for tomorrow. Husband will boil up the beans in the morning, then if he doesn't get a chance to start it before I come home from work, I'll just put it on after the baby is in bed and it'll be great. Love fall cooking.

I'm not sure what we're having. We had Caesar salad for lunch and I was planning to do a chicken quinoa side dish for supper, but I realized I don't have chicken cooked, cut and frozen. SO I might do hot dogs or something fast. Esp since I won't have a lot of time to do it. He'll be working on his shed for the next couple hours till dark, then come in to process the rest of the deer meat so that's going to be a mess that'll take a while to do.

The bacon and whiskey chili is finishing up, and I am so excited about it. Comfort food and a pumpkin ale at the end of a long, miserable day are just what I need.

I may need that chili from you! I participate in a chili cookoff for charity the last several years and I've only won once.
