Dinner - What Are You Having? - Page 67

I should make a pumpkin pie. That sounds so cozy. It's gotten cold.

 

Today, we're having spaghetti made with tomatoes I harvested last night (and onions, jalapeno, and herbs actually) and the deer hubby got this week. We just finished processing it last night. Tues he shot it and quartered it. Wed we, with his 3 teen sisters, got all the meat off the bones and so forth. It was a very small deer so we only got 13 lbs but it's nice lean roasts and steaks and so forth. Then we have 12 lbs (1 lb or so got trashed bc the grinder was putting shavings in it) of ground meat. I'm putting a lb in the spaghetti. I'll freeze some of it for when baby comes. ;)

 We have been so busy lately! Between school, preschool classes, gymnastics, swimming and 4H, the weeks are going by quickly. Even though I'm a SAHM, I think I'm going to start cutting and prepping all of my dinner veggies and meats on the weekend because I'm feeling so rushed in the afternoon. And I would like to adapt even more recipes to the CP.

 

It was hot, hot, hot last week. We only get really hot here a couple weeks a year, so no AC, and by the third day of temps in the 90's we are miserable. We had a lot of sandwiches, salads and hot dogs.

 

Tonight: champagne chicken with mushrooms and onions, cauliflower gratin, parmesan rice

 

On the menu/In the kitchen right now:

CP pork roast with mushroom onion gravy, mashed butternut squash, roasted red and sweet potatoes and brussels sprouts

CP chicken cacciatore with zucchini, red pepper and mushrooms, wheat pasta, spaghetti squash

Penne pasta with sliced sausage, cannellini beans, broccoli, carrots, red pepper, asparagus, mushrooms, fresh basil and parm cheese

Carne asada tacos, black beans, salad

Spanish rice with ground beef, black beans, salad, cornbread

Red snapper, parmesan noodles, brussels sprouts

Stuffed pork chops, baked acorn squash, roasted sweet potatoes

Steaks with sauteed mushrooms and onions, roasted sweet and red potatoes, broccoli

Thai red curry with tofu, broccoli, butternut squash and onion, peanut sauce with chicken, red pepper and sauteed spinach, quinoa

Oh you mean as a SAHM you don't just sit around all day watching TV? lol.gif  Without a kid, and even during the summer when I'm not teaching the girls (my teen/pre teen SILs) I have no time for anything.

 

Tonight, probably left overs from last night. Biscuits and gravy, eggs and bacon. YUM.

Love how colorful this stew turns out! Kids won't eat it, though - DD1 due to the meat, DD2 due to the spice - so I will make them a couple of quick quesadillas & they can have the rice and vegetables we'll have along with it.

That would drive me nuts. I'm striving to be a one dinner household... hopefully that works out. 

 

Tonight husband made meatloaf with a spicy ketchup glaze and egg noodles. So good.

Yeah, not so easy. I feel like I've posted about this a lot, but DH can't have (cow) dairy, DD1 is vegetarian/pescatarian, and DD2 and I are omnivores, but DD2 doesn't favor things mixed together or highly spiced.

Tonight was use-up-random-stuff-in-the-fridge night, and, in addition to the constellation of eaters I mentioned above, my DD also had a vegan friend here tonight. So, I ended up making spaghetti with olive oil, garlic, red pepper flakes and parsley; some separate sauteed chicken with jalapeno and olives; a green salad with Italian dressing, and guacamole (avocado, tomato, lemon). It worked!

I am busy with work but doing better with getting dinner on table...

Monday night I made 8 chicken leg quarters in the oven spanish rice with steel cut oats mixed in for more whole grain?... 

I then turned a few of the chicken leg quarters into chicken noodle soup which was a much bigger hit then the chicken leg quarters and I am so proud.

tonight we also had chicken noodle soup and chicken leg quarters and am making broth right now to make some more chicken noodle soup for another time.

 

Tomorrow Spaghetti.  I had thought of lasagna but did not want to spend money on extra cheese when I already had parmesan brick for shredding over noodles.

Tonight I'm making my Salmon with Sour cream/horseradish sauce again and roasted onions and fennel. I'll Probably add some spinach in there too. 

 

Tomorrow I'll figure something out with porkchops. Maybe bbq?

Tonight we are having split pea and chicken soup.. Tomorrow we are having the leftover chili a lady from church brought by (so grateful for the ladies from my church who has been feeding us so I don't have to cook every night) and Friday we will probably have leftover split pea. Then I have to sit down with my cookbooks and figure out what else to make for the month. Thankfully its been cooling down so soups have once again became popular, quick and easy to doorngbiggrin.gif

Mom31, I love using chicken leg quarters to make soup that actually needs chicken meat in it (as opposed to using stock made from bones). They have a nice amount of fat and meat on them and make a super tasty chicken noodle or chicken posole soup. I always stock up when the big packs go on sale.

 

Tonight, we are having chicken cacciatore in the CP with zucchini, mushrooms and red peppers added in the sauce, wheat pasta, and spaghetti squash for me (have finally accepted there will be no more pasta for me, so long old friend :)

We did pasta with Italian sausage and a chicken veloute sauce. Pretty good, but more importantly - quick and easy.

Tonight I'm getting treated to a walnut burger and fries from my favorite dive bar.

 

But last night I made something delicious! I breaded and fried chicken-style seitan, made a vegan gravy with miso, and had sesame broccoli on the side.

 

This might be a strange question without an answer... but can anyone think of a good tomato substitute? I can't eat tomatoes anymore (GI stuff) but have been craving good ole spaghetti and meatballs. I also can't do foods that are too acidic, but can cheat a little with lemon juice or vinegar.

The only thing i can think of is some roasted peppers cut with a lot of carrots.

For the 1st time in a long time I have managed to make a meal plan for the week that I am actually looking forward to, already have all the ingredients for and will stick to. Amazing!

 

Refried beans, Mexican rice and Quorn in green mole

Potato, kale, sausage and white bean soup (possibly some pumpkin scones too)

Green salad, slow cooker chipotle baked beans, and quinoa bread

Roasted pumpkin and sweet potato, seitan loaf, and quinoa with walnut, spinach and apples

Vegan spinach lasagna

Fried rice or thai pineapple quinoa and sesame oil noodles

Re: tomato substitute. Google "tomato-free pasta sauce" or "no-mato pasta sauce" - I know I have stumbled across recipes like this. I think they do generally have lemon juice/vinegar in them, though.

 

Tonight we're having bulgogi skirt steak, thin noodles and broccoli with DD1 eating hers with a can of Indian lentils instead of meat.
