I need to do something similar! I ended up with a kid with a minor stomach bug home with me today, so I don't think I'll make it to the store and need to use up a cauliflower.
Dinner - What Are You Having? - Page 69
Oh! I saw roasted cauliflower soup on Pinterest the other day!
Tonight we're doing oven baked chicken with leftover barbecue sauce from the pork yesterday. We also have leftover baked beans, so we'll have those, plus tater tots. Love me some tater tots!
We wanted something quick and easy, so we made pasta salad tonight - our standard "house" recipe with ham, cherry tomatoes, lettuce, chives (instead of scallions since we didn't have any), capers and either balsamic vinaigrette or Italian dressing. We usually put in olive tapenade as well, but didn't have any, so left it out.
We had family visiting this weekend through yesterday, so I just had a chance to put together a menu today.
Yesterday I made this new recipe http://www.skinnytaste.com/2010/07/asian-glazed-drumsticks.html It was super good, we had it with quinoa and steamed broccoli and cauliflower. It's definitely going into the recipe rotation. It did take extra time for the sauce to cook down but I had used bone in thighs so it wasn't an issue.
Tonight I had ground beef I needed to use.
Kids: hamburgers, oven fries, pears, carrots and celery
Adults: hamburger patties with sauteed spinach and onions, sliced tomato and avocado, tomato basil bisque (I bought it last week for lunch and need to finish it up)
On the menu this week:
Sauteed kielbasa, red peppers, onions and mushrooms, roasted sweet and red potatoes, cauliflower
Steaks, roasted potatoes and vegetables
CP chicken cacciatore with peppers, mushrooms and zucchini, wheat pasta, spaghetti squash
Salmon, parmesan noodles, spaghetti squash gratin, broccoli
CP pork roast, baked acorn squash, roasted sweet potatoes, cornbread dressing
Indian style curry with chicken, chick peas, broccoli and red peppers, brown rice, sauteed spinach
Paleo chicken enchilada soup (trying a new recipe, it calls for coconut milk and lots of peppers)
Last night we made bacon and whiskey chili and it was especially good. The last couple of times we've made it recently we've had people eating with us that can't tolerate spice, so I left the jalepenos out and put Tabasco on the table for those of us that wanted it. But last night it was just husband and I eating it, so I did a big pot with jalapenos - it was so good! I'd forgotten how good it could be.
Tonight we're doing another cold weather staple - a big pan of scalloped potatoes with ham.
Last Friday we had Baked Potatoes, Saturday was Chicken Alfredo, Sunday was Pizza, yesterday was Cheesy Sausage Manicottti. Today we pretty much have left overs of all but the potatoes. Probably tomorrow too. The baby's due a week from tomorrow, so I've got easy stuff planned through the end of November so I have easy meals in the house if I go over a while. Then I have a lot of stuff in the freezer, and I know my MIL will bring food over all the time. And my Mom will cook when she comes a week after baby's born.
