Tonight husband made spiced baked chicken thighs, tater tots and baked beans. Turned out really good. 

 

On a side note, I really need to start baking Christmas cookies. Only two more weeks!

Another challenging dinner tonight - GF, vegetarian, minimal dairy and reflux are in the mix this time. I'm making a spinach-goat cheese lasagna (non-GF), plain brown rice noodles, and chili mac sauce (tomatoes, onion, chili powder, kidney beans, ground beef), cheese on the side plus a green salad with garlic dressing.

tonight is tilapla. I haven't decided if I'm breading and baking it or just cooking it on the griddle with cajun spice. Probably baking since I plan to roast the asparagus I got the other day. I hate buying it, its so expensive, but it's one of the very few green veggies that both DH and DD will both eat with no complaining. (DH dosen't complain, just chooses not to eat others which makes insisting that DD take at least a bite harder) and since I'll have the oven going any way I'll bake a potato for DH and sweet potatoes for DD and I.

It is baked potato weather, isn't it? DH is making baked potatoes tonight. Toppings are sour cream/cheese, ground beef with enchilada sauce.

 

This week's plan otherwise:

 

* Pasta bake with goat cheese and spinach with leftover pasta (the goat cheese-spinach lasagna was a hit the other night)

* Rice & tofu (w/ jar of lemongrass sauce) with bok choy

* Some kind of crockpot, clean-out-the-fridge soup with pinto beans.

We're doing chicken noodle soup again tonight. We've been eating a lot of soup lately. I've been thinking about doing bolognese soon too.

I think asparagus is expensive to- but honestly none of it goes to waste here because ds loves it... so I am willing to buy it.

 

We had asparagus and pasta last night...

and tonight uhhh... crackers and tuna?

Is that dinner?

 

I guess we are grazing.  I made macaroni salad for me...

Tonight we are having salmon baked in foil with butter, garlic and chives, roasted brussels sprouts, couscous, broccoli and pears.

 

Last night I made a pot of pozole rojo with leftover pork roast, it was super tasty.

 

On the menu this week:

Steaks, sauteed onions and spinach, roasted sweet potatoes and brussels sprouts

CP kielbasa, red cabbage, and onions, mashed potatoes, broccoli

CP chicken cacciatore with zucchini and mushrooms, wheat pasta, spaghetti squash, sauteed spinach

CP whole chicken, stuffed baked squash, roasted sweet and red potatoes

Fish tacos, black beans, salad

 

It's so ridiculously similar to my other weeks, but I have a lot of the same ingredients and am kind of stuck in a food rut. Plus with food prices rising the way they are, I need every meal to be one both kids will eat so I'm not making extra or wasting anything.

Wed: Blueberry pancakes and sausage

Thur: Bean tacos for the kids and vegan hot and sour soup for DH & I

Fri: Either bok choi, carrot, broc and tofu stirfry or seitan, roasted sweet potatoes, and braised cabbage, onion and apples

Last night we did salisbury steak over noodles. Tonight I'm making a home made bolognese, and I'm going to bake a lasagna with half of it.

Mmmmmm, bolognese. I always try to get invited to my friend's when she makes Mario Batali's bolognese.

 

Trying to clean out the fridge and pantry this week, so tonight was a soup made with veggie broth, onion/garlic, pesto, potatoes, carrots, celery, a can of tomatoes, white beans.

Hot dogs, and I need to remember to open a can of corn (though I don't like corn because it is so empty of nutrition) or make buttersauce corn from the freezer. I need to work on including a vegetable with my family's dinners - sometimes I don't. I would like to get in the habit. Last week it worked well when I boiled a sweet potato and cut it into four parts for each of my four children (with a bite or two for me); next time I might mash it. They didn't all eat it but it was popular with those who did. Sometimes I boil baby carrots and serve those when they're cool enough. One or two of my children are so picky that they won't even eat carrots or peas, so we do something called "no thank you bites" that we learned from a grocery store dietician: as old as the child is, that's how many bites he or she needs to take before he can stop.

Catholic Mama - One thing I learned from my own aunt was to put out a tupperware serving tray with cut-up vegetables and a dip in the middle (usually ranch). My DD2 eats quite a few vegetables this way. She doesn't care for most vegetables cooked, but will gladly eat them raw.

 

Tonight's dinner was quick black bean quesadillas - I had about 10 minutes to put dinner together and that was with grocery bags still sitting on the kitchen floor!

 

Tomorrow - potato-cauliflower curry, rice, cucumber-tomato raita

Friday - dinner at my sister's: bringing pineapple-cucumber salad (fresh pineapple, cucumber, lime, cilantro, salt)

Saturday - dinner at a friend's: chili that I don't have to make, whoo hoo!

Sunday - dinner at another friend's: probably ordering in

Then vacation, yee hah!

 

Thinking about the new year & getting back into meal planning for the week, which has been slipping lately! Also looking forward to hearing about all of your holiday meals!

Thank you for that idea, Ragana. I already had carrots on the list so I added celery, cauliflower, and cucumber. (ha ha, I was not intending to alliterate!)

my son also prefers his veggies raw...

i need to get back into the habit of posting in this thread... also need to get some freezer meals cooked while im out of school.

tonight we're having sausage and eggs and homemade (well, from a store bought dough) tortillas and apple sauce
