Tonight will be CP black beans and rice with homemade "winter salsa" - a can of diced, fire-roasted tomatoes mixed with chopped onion, cilantro, 1 garlic clove, lime juice and salt. Plus cheese, sour cream and lettuce.

 

Tomorrow has to be something based on cooked chicken tenders left over from the weekend, plus a vegetarian option. Maybe stir-fry and soba noodles with peanut sauce?

I made yummy pizzas today....

I had bought some naan bread ( two pieces...)and topped it with olive oil, garlic, can of italian style tomatoes - just like a few spoon fulls and chopped kale ... a handful of motzarella and then threw a handful  of sunflower seeds .... baked for 5 minutes- soo good.  DS loved it... as did i.  I am hoping to make up some pizza dough and freeze it for meals... anyone know how to do that?

I know how to make pizza dough... but not how to freeze it?

It was super cheap and I feel pretty healthy.

Changed my plan. Went to Aldi today & they had Spaetzle! http://en.wikipedia.org/wiki/Sp%C3%A4tzle

I'm going to make that with cheese and onions, leftover chicken, sauerkraut, broccoli.

 

Another meal this week - veggie chili with pinto/black beans, peppers, corn, etc.

 

Tomorrow might be dinner at a friend's. If so, dinner will be spinach and goat cheese lasagna.

I just make my favorite dough recipe, par bake and freeze. Naan is super fast n easy too. Lots of recipes online.

Tonight, something w my gf pasta, canned tomato something and cheese. Probably salad too.

Tuesday was meatloaf, mashed potatoes, and corn.

Last night DH had to work late, so the kids and I had hot dogs, carrots, and grapes.

Tonight was butter beans, corn bread, green beans and oranges.

Yesterday, we had white bean and chicken chili.

Tonight, we had baked barbecue chicken with roasted potatoes and green beans in rosemary butter sauce.

Last night was beef stew, tonight I'm thawing chili and we'll have that and left over corn bread.

Ooh, cornbread! I haven't had cornbread in *forever*!

Tonight is country cooking around here.  Cornbread (I throw some cheddar into it), pintos, homemade mac & cheese, rainbow chard, and pintos.  I am excited.

 

eta:  Last night, dinner was crackers, cheese, and tonic water.  I only post on here when I feel good about what I've eaten!

Thanks! My husband having this job is going to add some much-needed income to our household, so we're pretty excited about it. It is a bit of a sweet/salty combination, but you can certain lessen the brown sugar without detrimental effect. And recipes are meant to be shared, for sure!

 

Tonight I cooked ahead in the morning while my husband was home. I made a big pot of - the bacon and whiskey chili! It's so cold and I'm going to be the only adult home this evening, so I figured I'd make what I had a craving for.

Yup! My family went out tonight, and I had school so I had a crockpot baked potato mushed up with cheese, broccoli and taco sauce for dinner. Tomorrow something using up the rest of the crockpot potatoes - probably potato and chickpea curry with rice.

Last night we had a skillet concoction with the leftover butter beans, celery, onion, garlic, turkey smoked sausage, and a potato. Salad and orange slices for sides.

Tonight is tacos/taco salad

Wednesday- ham and bean soup

Thursday- beef stew

Friday- chicken stir fry

Saturday- cook-out at my Dad's. I'm making potato salad.

Last night we had crockpot hot wings with rice and green beans. Tonight we ordered in - I had wonton soup and Mongolian beef and husband had sweet and sour chicken. We've got a pork tenderloin defrosting in the fridge, but it's doubtful it will be ready for tomorrow - so who knows what we'll end up with. Maybe scalloped potatoes or breakfast for dinner?

We've been doing a lot of soups and stews this week. Last night was broccoli-cheese soup. Hubby want impressed but I liked it, as did my in laws. Rooney is left over soups and left over taco stuff or maybe a taco salad.....

Last night was pot roast rather than beef stew.

 

Tonight we'll have the leftover taco meat and beans. The kids will have nachos (they are so excited!) and DH and I will have tacos or taco salad. We'll finish up a quart of home-canned peaches to go with.

Got my plan for the week together yesterday.

 

MON Storebought veggie burgers (having that for lunch today, too)

TUE Dragon noodles, tofu/edamame

WED Lemon-garlic tilapia, rice, salad (scratch the rice and salad - I made potatoes with garlic butter)

THU Spaghetti & tomato sauce with lentil meatballs

FRI Crustless quiche with spinach or possibly Huevos Rancheros (the quiche might have too much dairy in it; might try to adapt the milk/cheese)

SAT Dinner out (someone else paying - whoo hoo!)

 

I looked up the four recipes for Tues through Fri on Budget Bytes because I was getting in a major rut. Someone here or on another thread posted that site, and it's really great.

Monday was sloppy joes, leftover potato salad, carrots and cucumber slices.

Tuesday was breakfast. Scrambled eggs (our hens are laying great right now!), sausage, blueberry coffee cake, and orange slices

Tonight is spaghetti, focaccia, and green bean. I am making enough to feed 2o or so kids at youth group in addition to our family.

I don't know about tomorrow. If I get up and get some beans soaking, maybe some black bean and rice bowls.

I love Budget Bytes! I have been following for years and get some great ideas there. I mentioned making black beans tomorrow- I use her recipe with tomatoes and jalapeno.
