Last night was a dish my Grandma used to make.  It is an Italian stewed chicken over cheesy polenta, with salad & bread for dipping!  This is total comfort food at it best & super cheap too boot!!!

 

Tonight is fish tacos with all the toppings, I might also make a quinioa salad with black beans and avocado, onions, red peppers cucumbers lime & cilantro if I'm feeling it!

Last night was chicken and dumplings, to which hubby commented, ''Soup AGAIN??'' Like I was trying to kill him. So thankful tonight is quesadillas. If I still have tortillas. Lol I just want to do as much soup as I can while it's cool. Beside the fact that I get it in at no particular time and its ready when he gets home, no matter when Ana decides to nurse. Her nursing time corresponds with my cooking time most days, so that is making crock pot meals sound great. I should load my crock cook book to my Kindle again.

This week, in no particular order:

 

tonight:Winner winner chicken dinner: roasted chicken with stuffing, mashed gold potatoes, mashed butternut squash, pan gravy, sauteed asparagus, broccoli and pears for kids

 

Chicken soup with rice (basic carrot, celery, onion, corn soup), cornbread

Ground beef tacos, corn tortillas, chopped lettuce, tomatoes and avocado, carrots for kids

CP pork roast with french onion soup and mushrooms, roasted sweet potatoes and brussels sprouts, broccoli for kids

Waffle wednesday for kids, Indian chicken curry with chick peas, broccoli and red pepper, quinoa

Sauteed kielbasa, cabbage, peppers, and cauliflower, mashed gold potatoes, brown rice and carrots for kids

Steaks with sauteed onions and mushrooms, roasted sweet potatoes and brussels sprouts, broccoli for kids

Last night I just cooked some boneless skinless chicken breasts with a ton of seasoning, and served it with broccoli and orzo with parmesean.  Simple, but everyone ate it.  Oldest DS also had blueberries...he's my little fruit bat.  Tonight will be some type of pasta with a quick tomato sauce since it's Friday/Lent, and younger DS requested peas, "the way you make them, mom"...which is just steamed with butter, lol...  Probably make up some garlic toast.  I do have a no-knead bread dough with dill and cheddar rising right now, too...yum!

Last night we had Japanese-inspired rice bowls - rice, tofu, cabbage/carrots sauteed with ginger and soy sauce & toppings: furikake (savory "sprinkles"), nori seaweed, umeboshi plums, etc. Also a simple cucumber salad. I had some stuff that had been sitting around a while that I wanted to use.

 

Tonight is dinner at a friend's house & I am bringing potato salad.

 

Need to come up with a plan for next week! Maybe I'll hit Budget Bytes again for some ideas.

Last night hubby was to hungry to wait for the baby to finish nursing, so he fixed hot dogs in the toaster oven. Lol Tonight I'm planning Travis. Tomorrow baked chicken, the next day pizza, then two days of left overs, then probably going next door for a bday party, then I'm not sure. smile.gif

I haven't been on here in ages... this is the last weekend of staying at my in laws - on Thursday we're moving back into our own place, so we'll get back to eating better and doing our own cooking again!

 

Tonight husband made a crockpot pork tenderloin with potatoes for us all before he left for work. It was nice to come home to dinner done. I just did up a pan of crescent rolls on the side - very tasty meal.

I have a whole chicken roasting in the oven right now with garlic and red wine....can't wait to eat it!  We'll just have something simple on the side...steamed veggies of some sort, and probably some egg noodles.

yesterday: pasta with cannelil beans and marinara, salad.

 

tonight: green chili tamales, black beans, steamed carrots

 

friday: potato soup, corn muffins, salad

 

saturday: pad tai with chicken

 

sunday: veggie stew, corn muffins (we have alot of corn muffin mix I need to get rid of), baked apples

 

monday: chicken cacciatore with pasta, salad

Yesterday - tofu with butter chicken spice mix & rice with sauteed chard

Tonight - vegetable green curry with rice (and I had a few spoons of almond butter - bwa haha)

Tomorrow - pasta bake with tomato sauce and goat cheese (trying Costco's goat cheese - I hope it's good. It was suspiciously cheap. Something like $5 for two logs, I think.)
Saturday - taking DD and a couple of her friends out for dinner (probably either Five Guys or Noodles & Company)

Sunday - will ask DH to roast a chicken (another Costco purchase - organic whole chickens)

Tonight: Teriyaki salmon, stir fried broccoli, mushrooms, red pepper and onion, wild rice, strawberries

 

This week's menu:

 

CP cranberry pork roast, roasted sweet potatoes and asparagus, broccoli and fruit

Beef, broccoli, mushroom, cabbage and red pepper stir fry, quinoa (breakfast for the kids)

Ground beef tacos, avocado, cheese, fresh salsa, salad, carrots and fruit

CP chicken cacciatore with mushrooms, green pepper and grated zucchini, spaghetti squash, wheat pasta and fruit

Grilled steaks, roasted red and sweet potatoes and brussels sprouts, broccoli and fruit

The baby had her first fever yesterday, so hot dogs it was. Today we had Texas Mac and Cheese. Basically classic Mac with chilis in it. I added chicken, next time I might add a can of Rotel or some sausage. Tomorrow is either left overs or salmon patties.

T-ball practice was rained out today, so I made a quick dough in the bread machine and made ham and mushroom pizza, with salad, carrots and pears. And the kids are watching a movie.

Thursday - Veggie chili (pinto beans & corn) with crockpot baked potatoes.

Friday - Some kind of clean-out-the-crisper veggie stir-fry with tofu & rice noodles, probably with Vietnamese sauce

Saturday - Out

Sunday - DH's roast chicken and vegetables

We've been settled in the new apartment for a week today, so we're finally getting back into a good routine with dinner. Last night we had Salisbury steak over egg noodles and tonight we did Italian sausage with spaghetti and marinara. 

 

Husband works tomorrow night, so I might do some bacon-wrapped cod and potatoes for myself, if he doesn't throw something in the crockpot instead.
