Yep - the last six months have been crazy-like. We did make a major leap from the city to suburbia six months ago, but the first place didn't work out so we ended up moving in with my in laws (at the edge of suburbia) for three months. Finally back in our own apartment now. It's been totally crazy. 

 

Husband is working tonight, so I'm having fish. He's been avoiding it like the plague since a fish dinner and the stomach flu coincided for him a couple of months ago - they are momentarily linked in his mind so he refuses to eat any seafood. So I'm having chardonnay-poached perch with couscous.

I'm working hard on stretching our grocery budget! 

 

Sat: Homemade Pizzas, 1 sausage, 1 veggie & salad

Sun: Roasted Turkey with sausage stuffing, mashed potatoes, cranberry sauce & veg

Mon: Turkey Bolognese over pasta, salad

Tues: Pulled BBQ Turkey Sandwiches & coleslaw

Wed: Italian Wedding soup

Thurs:Salmon burgers, salad

Fri: Buffalo Chicken salad

Scalloped potatoes and ham here tonight. I'm optimistic about spring arriving sooner rather than later, so I figured I should get in all the "winter" favorite meals this week. Tomorrow night I'm making a quickie coq au vin because I'm got a package of mushrooms we need to use up. We're cooking on the dregs this week, since we're a week away from our next bi-weekly grocery shop. I don't have bacon to put in, so we'll have to see whether it's good without it. Though you really can't go wrong with anything cooked and red wine and then flambeed. :-)

We did left overs last night, think I'm finally through those. I did make peanut butter laced brownies though. Today I'm not feeling well. I think I'm eating too much wheat again. greensad.gif I made hot dogs for him and English Breakfast tea for me. Tomorrow will probably be spaghetti.

Yesterday was chickpea-potato curry over rice. Tonight baked goat cheese with tomato sauce: http://www.wholefoodsmarket.com/recipe/goat-cheese-baked-tomato-sauce with baguette and random sides like a salad, hard-boiled eggs, pickles. Tomorrow something to use up the leftover chickpeas.

I'm going to join in!

 

Friday was a red lentil butternut squash loaf,mashed potatoes,green bean/mushroom sautee,peas and a beet salad

 

Sat was a vegan mac and "cheese" using the butternut squash and baked like macaroni pie...I was shocked how yummy it turned out

 

Sun was a quick dinner with leftovers. I made bubble and squeak with the leftover mashed potatoes and squash,heated up the macaroni and had beets and a veggie plate with hummus

 

Mon was a huge pot of black beans and rice with sweet potatoes and a ton of other veggies. Topped with avocado and black olives.

 

Tonight is hassleback potatoes(OMG THEY SMELL AWESOME) I used a veggie peeler to peel garlic and diced onions to put in the cuts. Using earth's balance and evoo,s&p,thyme,garlic powder on top. Mini quiches. Sauteed green beans/mushrooms/peas and a huge salad with avocado and apple

Scratch the spaghetti. He's working insane hours this week so we didn't eat breakfast till noon. I'm feeling achy from a cold, so neither of us felt like spaghetti. Well try again tomorrow. I made him a sandwich. He's got lettuce and jalapenos growing in his grow room. Those went on the sandwich too. It's nice to have those in the winter. smile.gif

I've seen yummy looking pics of this - need to try it sometime! DH eats little dairy since he discovered he is mostly lactose intolerant. Can you use frozen butternut squash for this?

We did chicken sausage over rice tonight. Not sure what's on the docket for tomorrow. Maybe tuna casserole.

Weds - Veggie burgers and oven-roasted potatoes (I overbought potatoes)

BUT I really made it easier then the directions and didn't add the veggies. We had salad instead of all the veggies mixed in since ds is picky like that. I would think you could use frozen squash since it's pureed. It doesn't taste like traditional mac and cheese but it's quite yummy
