Turkey pot pies with homemade pie crust made from freshly milled wheatberries. Yum!

We did brats, buttered spinach noodles and corn. Nothing to exciting for a Wednesday night.

Today we are having a "sort of bolognese-sauce" with pasta. Low carb pasta for me, and ww for my son. (I`m diabetic.)

 

The sauce is

 

Ground chicken/turkey meat, minced.

Garlic

Onion, finely chopped

Spices (Paprika, basil, salt, pepper)

Tomato paste

A little sugarfree ketchup

 A little full ffat milk or cream

A little water if it gets to thick

(I usually have atleast 1 bellpepper diced in there too, and a shredded carrot. But I was out of both today.)

 

Served with a salad, and shredded cheese.

My hubs and I are both vegetarian. I usually cook very simple but nourishing meals. Our recent staple meal is quinoa and red lentils mixed with steamed veggies (Brussels sprouts, cauliflower, broccoli, kale, etc) and seasoned with either curry powder or Italian seasonings, and a little salt, pepper and butter.

Husband make a potato and kielbasa skillet for dinner before he left for work. I need to put some kidney beans and pinto beans to soak for tomorrow's chili.

Last night the kids had homemade egg mcmuffins and fruit for dinner. We had all you can eat sushi for lunch so we weren't overly hungry.

 

I'm making chickpeas right now for a veggie pot pie in the slow cooker for tonight with salad.

 

Also making kidney beans for tomorrows kidney bean/mushroom/peas vegan shepards pie with pickle and cabbage salad and a kiwi vegan lime "jello" dessert with coconut whip cream on top.

We had based chicken I had marinated in Italian spices, onion and garlic, salt and pepper, olive oil and Apple cider vinegar. Yum! We had organic canned corn and salad, mostly from his garden room.

Tomorrow's meal needs to be started tonight in the crock pot too be ready when he needs lunch tomorrow but in honor of my Irish ancestors, Corned Beef and Boxty. I might make some bread, but since I'm trying to avoid gluten, I doubt I do. I'm skipping the cabbage, he freaks out when I being it in the house. Lol

I got 2h into cooking the chickpea pot pie which I've been craving for months and the smell overwhelmed my pregnant nose and that was the end of it. My inlaws ended up calling to take the big two out to dinner so the littlest one had a pb sandwich and fruit and dh brought us home thai....dinner fail eyesroll.gif

 

I've got the shepards pie filling cooking and going to attempt to get the energy to peel some potatoes soon

Last night we ended up having burgers and corn for dinner, so we're going to do the chili tomorrow. We did corned beef and cabbage in the crockpot today, of course. So good. And I was excited that Little Man, who normally won't touch meat with a ten foot pole, gobbled up a sizable portion of corned beef. Go figure. :-)

Today I came down with a nasty bladder infection, which I am trying to treat with vit C, garlic and lots of water (well, and Alleve for the pain - I still have to work, luckily I can work at home). So dinner has to be easy - rice from the rice cooker, heat up a can of beans & serve with toppings - cheese, sour cream, lettuce, salsa.

 

My meal planning has been all over the place since last week. Never did use up those extra chickpeas, either. Threw them in the freezer. I have felt no cooking mojo lately, so I didn't mind that we had dinner out Sat. and then got invited to a friend's for St. Pat's day (corned beef with horseradish sauce, salad, oat cakes, boiled vegetables, scones). I made sure I shopped for things like pasta so that I could take it easy with cooking if I wasn't too inspired. What do you do to get inspired when you're sick of cooking? And what do you serve on those super-blah days?

Oh no! Add in loads of cranberry juice and whip up some home made cranberry sauce or chutney for yourself to snack on. That should help clear things up too. 

 

When I'm in blah mode with cooking I dive in to "involved comfort food" - pasta bolognese, coq au vin, etc. - intensely satisfying favorites that take a little extra touch of work to pull off. That usually rejuvenates my interest in cooking, and gets the wheels turning about new things I can try, which usually start off as riffs on classics. 

 

Tonight, we're doing just that - a nice big batch of bacon and whiskey chili - with our own home-canned tomatoes! We didn't eat any of our home-canned goods while we were living with in laws, so I've still got tons of tomatoes, apples, picked hot peppers, and few different jams left. Time to get creative on how to use it all over the next couple of months before the fresh produce starts to come in. I'm going to need those jars again come summer!

Yest my stomach got the best of me and I ended up in the labor ward on iv. So dinner for the kids was dairy free grilled "cheese" and tomato soup with a plate of veggies and fruit. After I got loaded up full of gravol dh got me thai...again.

 

Tonight I'm going to attempt to cook. REALLY REALLY going to attempt to cook.

I ended up making tofu in the slow cooker with an oj/soy/honey sauce. Threw in onions,garlic,carrots and celery. Then tossed in cooked egg noodles,peas and broccoli. Having it with salad. Well the kids are. I just ate salad.

Husband ended up picking up a shift at work, so I ate random leftovers - a little bit of corned beef and cabbage from Sunday and a bowl of bacon and whiskey chili. Slightly weird, but I hate throwing out food!

Thanks for the advice. It went south very quickly (span of a day), so I ended up getting antibiotics. Now trying to eat yogurt and probiotics to counteract that.

 

Good idea about going back to something involved to kick start my interest. I like learning about various Asian cuisines, so maybe a visit to the library and some ethnic stores is in order.

Oh no! Hope you're OK! Don't be too hard on yourself when you've been hospitalized!!

 

Mmmm, Thai. For what it's worth, I always keep a tub of Thai curry & a can of coconut milk in the pantry to make fakeout takeout. Throw in whatever vegetables are available, baby corn if I have a can (try to keep that around, too), some tofu (or frozen edamame) & rice from the rice cooker & it's a fairly quick, adaptable meal.

NOw not only am I sick my youngest dd(16m) is sick. She's got an ear infection, chest infection and pneumonia. Fantastic

 

Tonight DH is working/gone to a gig tonight. I pulled some frozen macaroni cheese sauce out of the freezer and I'm going to bake some mac for the kids with some chopped up raw veggies on the side. Thank god for freezing leftovers

Tonight we had Stuffed Border Burgers, but I didn't stuff them, I was lazy and just melted the cheese on top. Oh,n had baked potato wedges on the side.

Friday - Having friends over, and there will be a lot of people. We are making a pot of rice, black bean soup, Korean bean curd-miso soup (I think this is called dengjang chigae), and Korean short rib soup (galbi tang).
