Working out my food plan for the week. Some dishes might change to different days depending on how much time I have with activities on a few evenings this week. I have lots of cut-up raw vegetables left over from a party Saturday.
Mon - Baked pasta with tomato sauce & goat cheese, leftover raw vegetables (and ranch dressing or hummus) and/or leftover edamame salad
Tue - Chickpea curry & rice - will try to toss in leftover veg. in the curry
Wed - Chicken/marinated tofu skewers, soba noodles, veggies and/or salad
Thu - (Tuna) fish cakes, rice with furikake/crumbled nori (or nori rolls if I get ambitious), veggies and/or salad
Fri - Hamburgers (veggie burger for the veggie) and roasted potatoes if it's not too hot for the oven - temp is supposed to spike up this week. If it is, probabably some type of salad.
