Dinner - What Are You Having? - Page 90

Working out my food plan for the week. Some dishes might change to different days depending on how much time I have with activities on a few evenings this week. I have lots of cut-up raw vegetables left over from a party Saturday.

 

Mon - Baked pasta with tomato sauce & goat cheese, leftover raw vegetables (and ranch dressing or hummus) and/or leftover edamame salad

Tue - Chickpea curry & rice - will try to toss in leftover veg. in the curry

Wed - Chicken/marinated tofu skewers, soba noodles, veggies and/or salad

Thu - (Tuna) fish cakes, rice with furikake/crumbled nori (or nori rolls if I get ambitious), veggies and/or salad

Fri - Hamburgers (veggie burger for the veggie) and roasted potatoes if it's not too hot for the oven - temp is supposed to spike up this week. If it is, probabably some type of salad.

Finally ran the oven clean cycle so its usable again! Yay. It had been smoking way too much to use the past few days.

I threw a bunch of stuff into the slow cooker today. Onions/garlic/carrots(some frozen sliced leftover from another dinner)/red lentils/celery/garam masala and I'll throw coconut milk into it and blend it at the end

We ended up having veggie dogs and sweet potato fries for dinner last night. Seems Dh unplugged my slow cooker before leaving for work eyesroll.gif

 

We had the soup for lunch today

 

Tonight is sloppy lentils and frozen fries with salad. It's all I can handle making

I've had a stomach ache all afternoon since a bad lunch, so I insisted on chicken noodle soup. I made the "grown up" version with herbs de provence and a little chardonnay mixed in. So good.

Tonight is chicken parmesan, high fiber spaghetti and apples for kids, sauteed spinach and mushrooms for adults.

Yesterday was ds's 7th birthday and he requested Mac n cheese, carrots and strawberries for him and dd. Dh and I had an Indian curry with chicken, chick peas, broccoli and red pepper and brown rice.

The rest of this week will include:
Teriyaki salmon, stir fried broccoli, carrots and red pepper, couscous/quinoa
Steak tacos, black beans, salad
Grilled pork chops, roasted sweet potatoes, broccoli
BLTs, oven fries, steamed artichokes

We had salads with hard boiled eggs and leftover hot and ready pizza.  Yeah, yesterday was hot and readys.  Oh well.

I think he'll get burritos at the gas store while he's out. I just want some Apple juice, for some reason. I'm on this Apple kick all of a sudden. Regardless, at some point today, I'll make rice and do the pulled crock pot Italian Chicken from yesterday's sandwiches over it.

Tonight I threw some leftover frozen tomato sauce with the leftover sloppy lentils and made noodles to go with it. We had it with a tossed salad with a ton of olives and pickled beets. I'm on a green olive kick...I may have eaten a half a jar straight out with a fork this afternoon...followed by an o'henry barduck.gif

Oh lord, hubby made burgers tonight. We look like bar Arians. But happy to report we had ketchup too!

Waffle Wednesday for the kids: waffles with homemade berry sauce, bacon, scrambled eggs and watermelon.

I splurged and picked up pinwheels for the mister and I (flank steak wrapped around red pepper, spinach and goat cheese) with roasted sweet potatoes and brussels sprouts.

Taco bar here tonight - seasoned ground beef, fresh tomato, lettuce, salsa. Might dig out a can of refried beans.

OK, have made the pasta with tomato sauce and goat cheese and the hamburgers from the above list. Subbed tater tots for the potatoes. Yesterday had to be quick, so instead of skewers I grilled the chicken and fried the tofu & served it with the last of the leftover veggies sauteed and rice from the rice cooker. Tonight I will adapt my fish cake idea into make-your-own sushi. DD2 and DH are going to a school event, so it will just be DD1 and me. Tomorrow I'm not sure about the curry, but the chickpeas are frozen, so no big deal.

 

Today I picked up some food for camping - hot dogs, sausages, smores stuff, potatoes. DD1 will have grilled marinated tofu instead of meat.

Every day just seems to get harder and harder for me

 

The kids asked for veggie dogs and french fries for dinner so I made that for them with some cut up veggies. I'm having some basmati rice with a canned curry DH got me. It is so yummy!!!!!!!

Oh yay! Camping season is almost here! Where/when do you guys get to go? And do you do tent or RV camping? We do tent camping so only have a cooler with ice, so meats and cold-storage items are limited. But if you have camping recipes, please share! I'm always looking for new ideas. We're taking Little Man on his first ever camping trip (just two overnights) over 4th of July this summer, so I am in full on planning mode.

Today was a massive food fail day for me, so I decided to redeem myself by going all-out for dinner - so I made coq au vin. I confess, I did not do the proper version with the thousand and one pearl onions to peel and a whole chicken that I had to portion, but still. I opted for diced onion and chicken thigh quarters. But otherwise, all out. And I am very glad indeed that I remembered to turn off the gas burner before I flambeed, because wow - the cognac I use ignited like nobody's business. If the burner had been on I would've had an inferno and no eyebrows. But my eyebrows are still in existence and the house hasn't burned down, so I'm counting it for the win.

You have NO idea how thankful I am for our teeny tiny fridge freezer. I've been pulling food out of it left right and center. I was really hoping to have some sloppy lentils to pack away but a friend of mine had knee surgery and can't do much so I sent a bunch to her.

Cavatelli with broccoli rabe and sausage! A northern Italian classic. Oh man it was good. You know it is good when your sleep deprived breast feeding wife has a kind word for it!
