I made a huge saute of veggies last night so I fried some tofu and mushrooms that dh got off the clearance rack and threw it all together with rice noodles and made a pb sauce. Huge "healthy fats" salad to go with it(avocado,sunflower seeds,flax oil and olive oil with lemon juiceyummy.gif)

We went with a classic here tonight - meat loaf (with a spicy ketchup glaze), mashed potatoes and steamed carrots. Yum.

Sweet potato simmered in coconut milk, chicken broth, and massaman curry...over rice. Simple and so good.

Tonight is veggie "chicken" baked in the oven with bbq sauce. I'm slicing up the leftover baked potatoes from Sunday and making fried potatoes with onions/garlic/mustard and horseradishyummy.gif. I think the veggies will be a saute of mushrooms/zuke and peppers. With a huge salad of course

Everyone's so healthy. I was going to have either chicken and rice or chicken rice casserole. I opted for frozen pizza instead bc I didn't feel lead to cook. Where is that last piece anyway.....

Hahaha please - have you seen how many times I've posted about fish sticks in the last month!? ;-)

 

Tonight we're doing an end-of-the-pantry meal to use up stuff before the next major grocery shop on Thursday - so I'm making pasta with garlic sausage and sauteed mushrooms in a chicken-based white sauce.

I have an O.B appt tonight at 7 p.m.eyesroll.gif So I don't want to be rushing cooking dinner/feeding the kids and getting out the door for my appt. I've decided to make slow cooker lasagna. Basically making it out of freezer things. Frozen grilled veggies/frozen diced zuke and spinach. Leftover pasta sauce and canned tomatoes. I'm making a sunflower seed "cheese". And with salad of course.

 

The big kids are gone tomorrow night until Sunday night and dh is working so I doubt I'll be doing much cooking for youngest dd and I this weekend. PACKING instead irked.gif

Last night was a weird night because we had play rehearsal at the theatre, so we ate linguine with butter and parmesan/garlic shaker stuff (Mama Francesca's...I'm obsessed). But then, after rehearsal, I ate toast with fried eggs. (Always starving after rehearsal.)

 

Tonight is baked macaroni and cheese with steam-in-bag broccoli and wheat bread baked with butter and that Mama Francesca's stuff again. Or I'll get lazy and make fried eggs with toast again.

Mediocre leftovers for me tonight while husband works. Last night's pasta didn't turn out quite the way I wanted... but tomorrow night is our big twice-monthly grocery shop so we'll eating like royalty this weekend!

Today we had baked chicken, rice and corn. Two starches, I know, but corn sounded better than beans.
I made some wheat few, dairy free Mac and questionable hemp cheese substitute. It looks creepy and I think the one but I sampled have me heartburn. SOMEONE (oddly not hubby, Bwahaha) was sitting on the floor throwing a tantrum because I couldn't hold her and work with boiling water. So all I got was a bite. It took some time, but I got her to sleep now. She wakes up for a snack 30-60 min after she falls asleep, then she's out for the night. So I just wait here.

Here too! Since we can't have eggs for breakfast for a while, he's wanted tostados every morning. So my fridge is majorly empty. He didn't like the oatmeal yesterday, so I'm thinking the rest of the state tortilla chips, a can of organic chili, the last of that bag of cheese, a minute in the microwave and boom. Tomorrow's breakfast.

Well, first I will say that the pork with beer in the crockpot was great, thanks kitchensqueen. I added KC Masterpiece bbq sauce that we had leftover from our last party and it got a big thumbs up from the boys. 

It's summer here and school has been out for two weeks. This past week we've been eating mostly pool party food and Chipotle. Not our healthiest week but it's been fun.

Last night was the lasagna using up leftovers. Our fridge is crazy empty. I've got some fruit and veggies. I'll send most with my Aunt for the big kids this weekend. Dh is gone most the weekend so youngest dd and I will fend with what we have....nothing exciting. I'll be honest I'm at the pregnancy point where I don't give a care about cooking/cleaning/getting up in the morning. I'm so tired. My Aunt is taking the kids to their local farmers market so I've asked for her to grab me some hemp seeds. I'm hoping they'll help the energy come back and Dh and I are going grocery shopping Sunday morning on the way to pick the brats up. I need inspiration!!!!

DD1 - "some kind of" curry and pasta bake

DD2 - spaghetti & meatballs and pizza bread

 

Guess it's good old standards for the next week! DH wants dinner salads, so I may work that into the equation.

Letting the kids have their Friday pizza and movie tonight, hanging in there with 4 more days of school: salami and mushroom pizza (cheated and bought the dough from Trader Joe's), carrots and strawberries and a 5:00 showing of My Neighbor Totoro.
 
I am so not in a pizza mood, think I'll make an indian curry with shrimp, chick peas and whatever veggies I have around, and rice: the white stuff, living on the edge.

Oh, LOVE that movie! Excellent choice.

Is the TJ's dough good? I would like to try cheating on pizza, too. :-) I usually only make pizza bread. It's our fast food dinner.

Glad you like it! It's definitely a summer standby at our house. 

 

We did our big grocery shop (ugh, slightly over budget this time around...) but I have no idea what the plan is for dinner. It's one of husband's work nights, so crockpot something? But we need to get it in soon if he's going to be able to eat some before work. Maybe hot wings? Who knows.

Last night was delicious! DH made a baked chicken and rice dish from a recipe that we got off allrecipes.com, plus some of our own additions. Two layers each of shredded chicken and a creamy sauce made cheese, cream of chicken soup, black olives, and salsa. Sauteed zucchini on the side and fresh tomatoes - both from my friend's garden. Apple crumb cake (store bought) for desert. This fed three adults and one kid and there's enough left for one more meal for 2.
