We did salisbury steak over egg noodles last night. No idea what we're going to do for tonight - husband has to work so we'll likely have a quick bite early before leaves. Need to figure it out soon.

I ended up doing barbecue-marinaded chicken, which I baked in the oven. Baked beans alongside. Big family meal for tomorrow will be lunch for us, so I'm thinking of making cioppino since we don't need to worry about having leftovers for lunch.

We had grilled chicken and veggies in foil packets. It was supposed to be skewers, but I forgot we were out.

Last night we went to DH's aunt for a BBQ. She's awesome and totally veg friendly. They made us veggie burgers and even BBQed them on the top of the grill so no meat juice touched love.gif We had potato salad/tossed salad and coleslaw all vegan too.

 

I've been nesting all day and CRAZY moody. Packing and packing and restless and in an uber bad mood. Dinner tonight is going to be quick. I've got canned tomatoes in the fridge and tons of half bags of pasta so I'm guessing I'll toss that together with a salad and whatever veg I need to use up

Aww, that's very sweet and thoughtful of her! :)

 

Today we had some pulled chicken and venison that I threw in the crockpot last night with salsa I'd made last fall and froze over rice. It was great and we've got plenty to freeze for my stash. :)

I don't feel like eating cioppino twice in one day, so I'm having a baked potato and leftover baked beans.

Last night I did just throw together a pasta using leftovers,half bags of pasta and tons of spices. Everyone had seconds so I guess it was a winner shrug.gif

 

DS's class made a BBQ meat spice rub for Father's Day presents. DS was worried that DH would have nothing to eat it on. So tonight I'm making roasted potatoes covered in the spice and a twist on  Vegan Dad's Chickpea Cajun Patties,a saute of eggplant/mushrooms and bok choy with some sort of sauce and a pickle cabbage slaw

A friend made us an Irish breakfast this morning, so dinner will be the other meal of the day: grilled chicken, pitas/hummus/baba ganoush from our favorite Middle Eastern store, cucumber-tomato-feta salad, canned "big" beans and some olives.

Husband worked a day shift today, so he requested shepherd's pie for his Father's Day dinner. It's really nice to have him home on a Sunday night for a change and he got to do bedtime with Little Man.

How nice, KQ! :) Mine pulled nearly a double shift last night and didn't get home until almost 6 am. That means I didn't sleep well at all.... Which means she didn't either.... We'll probably all be grumpy butts tomorrow.

 

SO I didn't do the blueberry muffins I was planning to. He stopped and picked up some kind of tortilla with canned cheese and allegedly chicken rolled into it and then fried. It wasn't something I'd want to eat every day. He also got some of those overpriced fried pies. I think they were on the shelf way too long because they made a huge mess. As you can see, today was a gluten day. I saw him with his inhaler too, but it was after he was jumping on the trampoline with his 5 yr old nephew so who knows if that's the cause or the gluten. Or both.

 

I made gf, egg free, dairy free brownies to take to the farm for the family Father's Day thingie. It turned out really well so I was happy. I left them for my 12 yr old SIL, she was diagnosed with allergies to gluten, egg and dairy (figures!) last week so she's feeling deprived. She was happy that I left those and some GF rice crispie treat thingies over there.

 

We ate grilled burgers and hotdogs. I scarfed a hotdog, I actually want another one.... It wasn't even like OH SO GOOD either. Lol

Tonight is "It's gotta go" freezer day. Trying to clear out some stuff. I'm making a casserole out of leftover mexican rice and beans/refried beans some canned tomatoes and biscuit topping. I don't have much hope it'll be good tho eyesroll.gif

 

I'm also tossing a salad together with the leftover pickle salad from yesterday and some spinach/tomatoes and whatever else I feel like cutting up

After grilling yesterday, it's pasta & sauce & ground beef today - we want to get down to the beach while it's light out.

Grilling leftovers & pitas & dips will be lunch tomorrow.

It's over 90 degrees here but like some kind of a psychotic I've got Cincinnati chili simmering on the stove. It's hockey night here and we wanted hockey food, no matter the temperate outside. Mercifully we're having a freak unforecasted rain shower so it's suddenly downpouring out and about 10 degrees cooler. We're even getting thunder. The kitchen floor is getting soaked, but I have the window open for the cross breeze anyway. I can wipe up the water when it's over. Summer rain showers are too good to pass up.

Last night we had Sloppy Joe's using the Joy of Cooking recipe. I made a side of summer squash sauteed in butter and then put under the broiler topped with cheddar. It was delicious.

tonight we'll do pesto pasta with whatever veggies I feel like adding and maybe some feta cheese.

Tonight, as last, we'll have leftovers. There's some of everything we've had the past several days in there, so we'll see. If it doesn't all go today, we'll finish it tomorrow. If we finish it, tomorrow will probably be tuna salad or tuna salad & cheese filled biscuits (gf of course).

We have friends from abroad visiting right now, so my usual planning is not in effect, since they want to try stuff they don't get at home. Tonight we had mixed buffalo-beef burgers (good!) and salad. Tomorrow might be Vietnamese, or I might suggest Thai. I could make that if they don't want to go out in which case it would be either lettuce wraps with rice noodles and some kind of grilled meat with Vietnamese dipping sauce or Thai curry & rice. The next night we are supposed to go out for Turkish food.

Last night we had hotdogs, tater tots and the rest of the leftover baked beans. Tonight we had Italian sausage, egg noodles and green beans. No idea what we're going to do tomorrow - we're going grocery shopping after I get off work so we'll be home late and will want something quick and easy, no doubt. Maybe sandwiches or pasta salad.

Happy Midsummer! We're celebrating tonight, so I am contributing sauerkraut-coleslaw salad (with my homemade sauerkraut), Jacques Pepin's mushroom-walnut salad (with sour cream and scallions), roasted beets, and cheese-stuffed pickles. Yes, you might have guessed I am Eastern European orngbiggrin.gif
