Dinner - What Are You Having? - Page 98
I should have done chili the past week and a half, but I haven't. It's been so cool, just crazy!
Today I made gf pull apart dinner rolls and tuna salad. Mine with peas, his with pickles. Ana shared mine with the peas and loved it. I'm glad she likes fish so far! :) This was my GF take on "Tuna Cheese Half Moons", which Mom made for us growing up (and oddly enough, she happened to fix for supper tonight too). The classic way is to purchase the canned biscuits, press two together to make a large circle, fill with tuna salad and cheese. Close it up in a half moon shape, using a fork on the edges, cut slits in the top, brush with egg wash, sprinkle with something crunchy and bake. We've used Total cereal, crackers, bread crumbs, panko, just whatever. They're totally a comfort food for me. :)
Have not been home for dinner for a few nights - Sun. was out with friends and Mon. was dinner at another friend's house. Last night I contributed salad - will have to look up interesting salad recipes, since I have been crowned chief salad maker when we have dinner with that group of friends! Otherwise dragging my feet on menu planning for this week. Luckily DH stocked up on fruit and greens and cooked some lentils, so we have smoothie stuff and salad stuff for breakfasts and lunches.
I think tonight will be a soba noodle dish with tofu; I just have to choose a direction - baked tofu + greens + BBQ-type sauce, stir-fried tofu + edamame + my stir-fry sauce (soy sauce, sesame oil, rice vinegar, chili-garlic sauce), etc.
Well, my plan got waylaid. Friends' had their electricity knocked out yesterday and are still without power, so we had 5 extra people for dinner. DH grilled tomatoes and made fresh sauce for spaghetti (w/ parmesan or goat cheese - that yummy Costco stuff! - and olives, optional). We also had salad. I'll try for soba noodles and tofu tomorrow, unless they need dinner again!
Got in from camping, it's hot, the kids had swim lessons, and I desperately need to go grocery shopping.
Kids: chicken patty sandwiches, oven fries (the bits that were left in the bag), carrots, strawberries
Adults: thinking dh will pick up some chinese food, hopefully not too heavy, vegetable mooshoo might be good
Summer has thrown off my meal planning this year now that both kids are old enough to get up and go with no naps all day and dh is home and he's always starving. I keep doing smaller trips to the store but I'm not keeping up. I think I'll work on a list with dh tonight and hit Costco tomorrow.
colemom, summer is throwing off my planning, too. Had friends in town, so 2 extra people for a week (most days), then friends w/ electricity out (5 extra people), and yesterday friends over (4 extra people). Luckily we get invited over to other houses, too I have been trying to have stuff on hand like extra beans, ground beef, pasta, etc. so that we can "expand" the meals if we are having extra people. Plus there are always at least two heads of lettuce in the fridge and some dressing for salads.
The other night everyone was going a different direction, so I finally made soba noodles, baked tofu & broccoli. Yesterday was tacos w/ corn tortillas, chicken or black beans, and yummy salsa from the Mexican market. Unfortunately, avocados were a bust there yesterday, so no guac. Tonight I haven't decided yet, but probably rice bowls with random veg stir-fry and marinated teriyaki chicken left here by the no-electricity friends - nice!
PS Costco - yes. I am going to go more often. What do you get? I find myself getting most of our snacks there - dried fruit, nuts, chips (one kid is addicted to pita chips and we get GF chips, too) - plus organic ground beef and chicken, sometimes eggs, multi-pack of Annie's mac and cheese, goat cheese in the two pack, beer.
