I've been in a cooking rut this week.  The kids & I ordered Chinese Monday & have just been picking at the leftovers.  I need to go grocery shopping but it's just so darn cold out.  I do have a Macaroni Grill frozen lasagna that I might bake tonight, and pray for warmer weather tomorrow for my trip to the store.  We'll see.

Freezing here, too!

 

Tonight will be veggie burgers/hot dogs with potatoes and cut-up vegetables.

 

Tomorrow chipotle black bean and sweet potato stew.

It's definitely one of our winter favorite. Sometimes we mix it up and do it with a good beer, but I really like the wine version the best. 

 

Tonight husband made Thai noodle soup for a quickie dinner before I went to yoga. And tomorrow I'm making pork hand pies - I'm so excited, because they're so good!

I came down with a stomach flu last night so DH was in charge of cooking today.

 

After tossing some ideas back and forth we settled on a very typical german dinner: 

creamed spinach

mashed potatoes 

fried eggs, sunny side up 

 

While I resorted to black tea and pretzels. :( 

 

 

 

And I *looove* Thai Noodle Soup, kitchensqueen. Do you follow any particular recipe? (I love all kinds of soups and stews in winter, but the kids tire quite fast from eating them ;) )

I made some rice to go with left overs tonight. Tomorrow will either be more left overs or chow mein that I have chicken thawed or for. Both need used asap, so we'll have to see.

Oh, guess what? I get to go on another diet. GAAAAA! I'm not sure if it's temporary or not. I found out the results of my genetic testing yesterday. Some messed up genes = pain in the rear for me. But maybe I can get it lined out. I'm still not sure what I can and can't eat. Lol Sounded like a lot of stuff I eat I need to cut back by half or should avoid. Aged cheese, all but the freshest meats, a lot of fruits and veggies, soy, fermented or preserved things, the list goes on.

Whose ready to hear Tracy complain? Bwahaha

Our Thai noodle soup is a bit of a misnomer; there's really nothing Thai about it - it's ramen noodles in a chicken stock base, with carrots, green onions, chicken and edamame. Seasoned with garlic and ginger. But it's one of our quick soup favorites. 

 

Tonight I made pork pie - but I'm really annoyed with myself. I made the perfect pork pies awhile back, and I either forgot to write the recipe I came up with down, or have lost it. So I had to wing tonight, and while it's probably going to be good, it's not going to be great. Oh well. Lesson learned.

Hehe, sounds like me with my tamale recipe....
I think the last of the left overs tonight, but I might cook that chicken for the chow mein tonight and finish tomorrow. Today I NEED to clean this house.

We're treating ourselves tonight and using a restaurant.com certificate we've got to order in since husband has a rare Friday night off. I'm getting xiao long bao (I hope it's not a total disappointment; I have a high standard on this one) and wonton soup, and husband is getting fried wonton and orange beef.

Ooh, that makes me jealous.  I have been craving Chinese food like nobody's business.  Are xiao long bao those steamed buns?

Yep - xiao long bao are also known as Shanghai soup umplings - they're the steamed buns with filling and broth on the inside. When done well they are absolutely amazing, but the ones we got last night were a disappointment, unfortunately.

That's good news!

 

Last night was a pasta bake with tomato sauce, spinach, broccoli, mozzarella and parmesan. Tonight DH made panini - pretzel bread with ham, havarti & dill pickle. I made a quick daikon and carrot salad to go with it, dressed with just a bit of ginger and ponzu (citrus soy sauce).

 

We're in the polar vortex again, and no school for anyone tomorrow and possibly also Tuesday. Plan for the next few dinners is

Mon - brown rice with edamame and fried eggs

Tue - chicken and roasted potatoes

Wed - pasta and sauce / fish sticks for DD2 who is sick of pasta (and maybe me - trying to cut back on rice and pasta, ugh)

I emailed the Dr and asked for some clarification on my new diet. I thought I could just Google the terms and figure it out, but to many things conflict to make good sense to me. Lol

Tonight I have cod thawed or to make Parmesan crusted with a salad and probably corn. I arranged the cabinet and have like half a dozen cans. Lol

Me too! Isn't just such a pain to have to plan out food that way, though? Hope yours isn't that bad!

 

Tonight, I'm making shepherd's pie - only calls for a tablespoon of tomato paste, so easing those back into the food routine...
