I need sick person comfort food, so I made chicken noodle soup tonight. I'm pretty excited about eating it.

Wild rice chicken casserole, if the wild rice ever cooks. Maybe I put in too much water? It had 4x instead of 2x on the box. Hmm

Husband is working a night shift today, so I'm thinking about making bean and kale pasta. He's a little worn out on it, but I love it and I have some kale I need to eat up, so tonight would be the perfect night to make it. Just need to get the beans soaking soon...

Here's what I have going:
Mon Tilapia, broccoli, salad
Tues Steak, potatoes, salad
Weds Chickpea curry, cauliflower, rice
Thu Panini, vinaigrette coleslaw

Days will probably get shifted around!

Sunday: homemade fish sticks with home fries and peas/corn
Monday: Crockpot chicken with carrots and rutabaga and green beans
Tuesday: Pasta e fagioli
Wednesday: Something involving leftover chicken and cabbage
Thursday: Peruvian lentils and rice with cole slaw

I had wanted to broil the tilapia with garlic and lemon, but ran out of lemons, so I ended up making it into a Vietnamese kind of thing with rice noodles, lettuce, red pepper, carrots, cabbage and a Vietnamese sauce (sriracha, garlic, lime juice, sugar, fish sauce).

Last night's supper was a bit disastrous. I hated the chicken (it's on my yuck list right now), had to make mashed potatoes because we ran out of time for the rutabaga - and they were red potatoes, which I don't like mashed. My gravy was too salty. Blah.

Today I racked my brain to make leftovers palatable and ended up with a brown rice salad with chicken, cabbage, green beans, shredded carrot, and a clementine vinaigrette. Not too bad!

Husband has the sore throat now, so he wanted soup. I just made some Thai Noodle Soup - nothing exciting. Kind of bleh.

We're having left over of the last posted casserole. It was good but TOO SALTY. Oops. Tomorrow is Mexican at my mil's for my sil's 18th bday.

We totally cheated and picked up Portillos on the way home. Breaded chicken sandwich and fries for me, burger and fries for husband, with onion rings to share. Little Man dined on mustard (he loves to eat it plain...), a few fries, cheese and he smelled an onion ring a couple of times... getting a toddler to eat a balanced diet is probably one of the most difficult things I've ever done.

Pizza from freezer, edamame, roasted cauliflower. Yum!

A few days ago I winged a quinoa, diced butternut squash, and white bean dish, starting with veggie broth and making a stew type dish out of it. I bet that would work just as well with rice instead. I'd toss in some bacon for flavor too.

Rest of week:
Thursday Sausages and hot dogs that need to get used up... Probably with carrot and apple slaw and goat cheese and crackers
Friday chickpea curry over rice
Saturday Mac and cheese casserole, peas
Sunday scrambled egg and hash brown casserole with cheddar and broccoli
Monday quesadillas and refried beans
Tuesday spaghetti and vodka sauce
Wednesday fig and goat cheese pizza for grown ups, regular for kids

Then I start over!

Although the reference up thread to shepherds pie reminded me i have mock ground beef in the freezer. Might do that soon too. Need potatoes for mashing...

Getting a little off plan here this week, but I think tonight will be tofu and cabbage stir fry over rice, and tomorrow, leftovers. Pasta e fagioli last night came out great, thank goodness. I've been in such a cooking funk lately.

Beef and veggie stir fry over brown rice couscous (because it doesn't take so long to cook! smile.gif ).

I've been trying to find little ways to save money without compromising my preferences or frying my brain. Lately ive been going to the store only 1 time week instead pf my usual 2-3. The I make myself get creative to make it to the next week. It seems to be helping some. Short of intense meal planning or couponing, are there any other little tricks?
