Dinner - What Are You Having? - Page 33

We had black bean and chorizo soup tonight. I looooove sausage.... and so does my little one :) I also made some bread that turned out amazingly good, the best bread I have ever made hands down. Tomorrow it is sspicy honey chicken thighs, carrots and roasted cauliflower, and the next day we are having spicy pinto beans and cornbread.

Well, my mom wanted to take us out so we had Outback tonight.  Kitchen stayed clean, and my belly is full!

KQ - I want to make your chili, but I don't have any whiskey in the house, and I hate to spend the $ on it for just that recipe.  Think I could substitute anything else?

You can buy little bottles of whiskey just a thought- like the airplane ones?

Cognac, brandy or dark rum would be decent substitutions, if you have those. :-)

LEFT OVERS!  We've had family here at our house since last week and they love to eat out.  I feel like death right now from all the junk.  So we're pulling out all the left overs tonight, heating it up and chowing down.  The dd's made mac and cheese.

Meatloaf and roasted winter veggies.

This is my favorite meal of all time. What recipe do you use for meatloaf?

I had some nice Italian sausages in the freezer so I turned them into a stew with onions, garlic, a chopped fennel bulb, fennel seed, and a can of San Marzano tomatoes and served it over polenta with peas on the side.

Tonight we had pork chops (salt, pepper, and white balsamic), applesauce, and  pasta with a pesto made from baby bell peppers, garlic, evoo, pine nuts, and parm. Topped pasta w/ a sauteed zuc. that needed to be eaten and also had a small salad in the form of mixed greens w/ dressing.

Baby (19 months) had last night's black beans (w/o the rice and not as popular tonight), a spinach/ kiwi/ apple juice puree, a few blueberries, and some of the pasta tossed only in butter (he wouldn't touch the pesto noodles).

Tomorrow will be either burritos with said black beans, brown rice, cheddar, cilantro and hot sauce...IF I make it to the store. If not, baked "fried" chicken, red potatoes, and green beans from the freezer.

Husband is in a SAHD role right now while I'm the full time worker, so he's starting to do more meals. Last night he made some Asian-style pork spareribs from our crockpot cookbook, with rice. They were pretty good, but we both thought they had a little too much peanut better and sesame oil. Definitely a repeat though, with a little tweaking. We were thinking to reduce those two ingredients, and maybe add a little plum jelly and/or honey for a touch of sweetness. Think he's doing dinner again tonight, so I can't wait to hear what ideas he has. :-)

I had another night out last night, (soup and crafting with the ladies at church) so DH and the kids had chicken nuggets, mand and cheese, and applesauce. At least the applesauce was homemade!

Tonight is pinto beans in the crockpot with onions and a smoked pork neck bone (way cheaper than a hamhock). I'll make some southern cornbread, and we'll have fruit and carrots and dip.

I am going to make chicken breasts and something else I guess- I have left over garlic bread and peaches and carrot stix. That's my kids fav.

Tonight we're having beef & pasta (like Hamburger Helper style - but homemade.)  Haven't figured out sides yet - definitely clementines, since they're soooo good right now, and probably peas or corn.  I'm hoping to mix up some lasagna soup for tomorrow, while I'm in the kitchen.

Lasagna soup?  Do tell.

Last night we ended up having a casserole made w/flour tortillas, leftover grilled chicken breast (tex-mex flavors), leftover caramelized bell peppers and onions, mushrooms, black olives, monterrey jack cheese, sour cream and salsa for the sauce.  I topped w/more olives, queso fresco, and cilantro.  We had a salad with it.

Tonight will be grain free pizza.  I experimented for lunch and the kids said it was great.  Coconut flour/egg/parm cheese/spices crust w/sliced sausage, sauce, ground pork, spinach, and mozzarella cheese.  I'll make one tonight w/red grapes, cheese, and swiss chard, one with ground pork and mushrooms and spinach, and one that is either bbq or taco, haven't decided yet.

I think I will thaw out goats milk and make some feta tomorrow or late tonight.  I am craving feta and wish I had it or gorgonzola for the grape pizza tonight.  I have enough culture for 180 lbs of feta, lol.  I imagine I can manage a pound or two in the next day.

I have some turnips I need to use up.  Any good ideas for them?  I was just gonna rub 'em w/oil and wrap in foil and bake unless I find a good idea.

http://www.whatmegansmaking.com/2012/01/lasagna-soup.html  This is the soup recipe I use, except I omit the red pepper flakes, and use 1/2 sausage and 1/2 ground beef....kids prefer it that way.

I love roasted turnips....quartered, slathered in evoo & salt & pepper.  YUM.

Great - now I'm hungry for turnips ;)
