Dairy free cheesecake? Or, what should I do with these graham crackers?

My mom bought my ginger loving DS a box of gingerbread graham crackers. At Christmas time. We still have them!! I need them to get used up somehow so I can stop seeing them in my pantry. We are dairy and peanut free.

 

I was thinking a cheesecake of sorts, using tofu likely, but I need a reliable recipe. Or I'm open to other ideas! :)

I don't have a recipe for tofu cheese-cake, but why not just eat them  & feed them to your kids as as they are, as cookies?

 

When I was a kid, that was snack in kindergarten & first grade - graham crackers. I bet your family could finish them off within a week by eating them as "dessert".

Make "icecream" balls. chop the graham crackers up finely or food process them. Use a scoop of your favorite flavor of nondairy icecream and cover it with the graham crackers, rolling them into a ball shape. let them harden in the freezer on a cookie sheet. Ready to eat!

I have a tofu based cheesecake recipe, it's the non-bake kind. Really yummy though!

Ooooh, the absolute BEST vegan cheesecake recipe!  It's the one I use and none of my omni friends/family can tell the difference (except if they know I made it).  Just be sure to use the non-hydrogenated "cream cheese".

My favorite way to eat graham crackers is with liberal amounts of nut butter sprinkled with organic raisins.
