coconut oil in cupcakes instead of canola?

HI everyone!

I found what seems like a delicious recipe for vegan cupcakes (making them for a vegan family coming to my son's birthday). The only ingredient I don't have and absolutely don't want to buy is canola/vegetable oil. I'm pretty sure I can use coconut oil instead but do I change the measurement or do anything else differently? Baking is not my "thing." lol.gif 

Also, it asks for 2 tablespoons of almond meal. Is that the same as almond flour and what is it's purpose (APF is used in the rest of the recipe)?

I use coconut oil 90% of the time when baking. I use the same measurement as when using other oil.

There is a difference between almond flour and meal.

Meal has almond skins and is "chunkier" than the flour version.

I use coconut oil exclusively in baking and I always use the same measurement as called for in any recipe! I've never had a problem with it.

I also switched to coconut oil now for all my baking. It is great! Almond meal is different than flour but you can replaced ground flax seeds for the almonds.

I have used coconut oil many times, you may need to melt it for it to mix in well. You can keep the same measurements though. As to the almond meal,I assume they are using it because it is good for flavor, texture and also adds protein. Good luck with your cupcakes : )

oops! Just reread the OP and remembered they are vegen, not for us.

Any one have any more TF style recipes to share? We did not like the ones from NT.

They were good! My only complaint was that the bottom of the cupcake liners were really oily...

Here is the website with the recipe! I wanted soy free and found it!!!  The almond meal gave it a great flavor, as well as the coconut milk and oil. mmmmm.

yum! This would be good with a batter made with coconut milk and bananas with coconut flakes in it.

I use coconut oil in almost all of my baked goods.  Yumilicious!  I always melt it first.
