point me to a how-to for a fruit "cake"?

My daughter's school is having a fundraising "fun fair" and they've asked people to donate cakes for a "Cake Walk".  I like to help out with the fundraising, but I'm having a hard time with all the sugar &  flour that are frequently used to do it.  So I had the brilliant - I hope - idea that I could donate a cool fruit "cake" - you know, an architectural sort of creation made completely out of fruit. (Which, yes, I know still has a good deal of sugar in it... but it IS a treat...)  I've seen things like this - one of my daughter's friends had one for her birthday last year - but I am very lacking in the artistic department and I need step-by-step instructions and templates and whatnot.  Does anyone know of any good sites for this sort of thing?

I know this isn't what you were asking for since it has no fruit whatsoever but I tried these two versions of a bean based cake (chocolate and vanilla) and thought they were awesome!  I think that she has some other cake recipes too, but I haven't tried them and so I cannot vouch for them.  If it is just the processed white flour and sugar that you'd really like to avoid than either of these would be perfect.  I used all honey to sweeten mine but I upped it to around 2/3 cup for the chocolate and 1/2 cup for the vanilla since I don't have stevia extract.  Another benefit is that it is gluten free (and could be dairy free I suppose) so that might appeal to some people there.

Thanks, I'll check those recipes out - but I was wanting something COOLER than a cake.  I've been pondering it all afternoon and I think I can do something nifty like a castle, with a watermelon, use part of the rind as a base, dig a "moat" around the edge, and then make watermelon "bricks" and pineapple "turrets" topped with strawberry towers, with the moat filled with yogurt dip and maybe some other fruity garnishes?  I want people to want it MORE than the cakes :)

I knwo what you're talking about.  I don't havea  linkm unfortunately.  one problem is it might not hold up well.

Yeah that's what I'm after!  I don't think I have that much patience for the melon baller in the first one though! LOL.  THANKS!!!!

I love the watermelon cake!

 

 Can you eat the "wedding" cake?  It is just a layer of fruit stuck on styrofoam.  Is it just for looks?
