Morels - How to cook?

DS2 and I were out walking along our property line that butts up against a small wooded area and we found 50 morel mushrooms. As a kid my Mom's side of the family always went mushroom hunting and then that night we would all eat the mushrooms. They were normally fried in butter and everyone got 1 or 2.

My husband has never tried them and quite frankly thinks my family is crazy. So, for the very first time I have a bunch of them that I'm responsible for cooking. Other than coating them in flour and frying them in butter, what are some other great ways to eat them? Do you have any favorite recipes to share?

Only thing to keep in mind is that you cook them thoroughly - they're toxic raw or undercooked (as are all mushrooms to some degree).

Also, some people react to eating morels (especially when drinking alcohol), so if your family has never had them before, only serve a few the first time and wait 24 hrs before another morel meal. 

 

Morels are fantastic with cream and butter sauces.  One of the best meals I ever made was halibut and morels: seared halibut with a sauce of "melted" leeks (cooked slowly in butter until completely soft) and sauteed morels with white wine and cream.  Very tasty! 

Or saute morels, add some red or white wine and reduce, then finish with cream and butter, and serve over a steak. 

It's hard to go wrong with good mushrooms!

I love morels cooked in butter with fresh shelled peas and chives and a little salt and pepper, until cooked, and then you add a little bit of cream, and cook til it thickens slightly. YUM!

I like them dipped in egg, coated in flour and fried in butter. YUM! Lucky you!!!

 

I remember having a breakfast at my aunt's farm when I was a kid and all that was on my plate was a t-bone steak and fried morels. ~sigh~ Delish~
