best warm-weather BEAN recipes please :)

Back to vegetarian after a few years of WAP and trying to regain a bean repertoire, lol.

 

Please hit me up with your favorite warm weather bean recipes as I live in the south and it is definately hot hot hot so chili or heavy curries etc. just wont do right now :), thanks so much!

Black bean corn salad with avocado added.

 

Bean and cheese tacos or burritos.

 

lentil/rice taco filling

 

texas caviar

Oooh, thanks for all of those, I dont know why I never think of texas caviar because I really like it ans have a good recipe for it.

 

Also excited about the lentil and rice taco filling, yum!

My favorite hot weather dinner:


3-4 cups cooked quinoa

1 bunch parsley, chopped in a food processor
1 sprig mint, chopped in a food processor

1/2 red onion, diced
1 clove garlic, crushed

1/2 cup dried fruit (I use a combo of raisins and chopped unsulphured apricots)
1/4 cup chopped roasted almonds
2 cans chickpeas, rinsed and drained

Fresh ground pepper
Juice of one lemon
2 TBS olive oil
1/2 tsp salt

I usually make this first thing in the AM so that it is cold and ready to eat at dinner time.

mmmm, that is right up my alley, I grow my own herbs and am always looking to throw them in everything :)

I often serve it with hummus, cucumber, melon and pita or lavash.

My suggestion is similar to Catnip's... it's a tabouli-esqe salad made with quinoa instead of bulgar and with added chickpeas.  So... quinoa, chickpeas, tomatoes, cucumbers, red onions, and parsley tossed with a dressing made of olive oil, lemon juice, red wine vinegar, crushed garlic, salt and pepper.  Yum.

omg, I am getting hungry, it is to close to dinner to reading all these yummy ideas.  I love the idea of using the quinoa instead of bulgur for the tabbouleh and then of course that black bean mango quinoa is going on the menu for tomorow cause I have all of the ingredients and an overactive cilantro patch, lol...

 

And I liked how the guy who posted the recipe for the black bean mango salad said that you could think of it more as an idea than  a discipline...I will use that to mix and match things to make cold grain salads for the old mans lunch box thumb.gif  he will likey.

We love this recipe later in the summer when the tomatoes are plentiful. It's basically roasted tomatoes and onions on good bread with white beans.
