I'm planning on having about 15 people for brunch and I need ideas for gluten free, warm weather friendly dishes (I'm hosting it the first weekend of June.) Here's my menu so far (I don't like to bake so I prefer ideas that don't include GF baked alternatives.)Â

I'm looking for something dairy free and vegetarian to add as a main dish for two of the couples that will appeal to everyone else too. Â I guess I could make another frittata but I don't know if it would be good dairy free... wouldn't it be kinda rubbery instead of creamy? Also I prefer it not be a baked good as I am the worst baker of all time; especially GF baking!Â
