Ok so it doesn't have to be beans and rice but a legume/nut/seed and a grain, basically looking to make a complete protein out of plant based proteins in one meal, not necessarily one pot.
I like making a big pot of beans to eat throughout the week, making the rice as needed/fresh for the meal.
Currently I make pinto beans and spanish rice as well as black beans and cilantro rice. That's it. Hoping to find some inspiration or recipes from some of you.
