Probiotics/enzymes - where to start?

I've recently been diagnosed with celiac disease and have had "IBS" for 10+ years. I am now, of course, gluten-free. DS2 is 5 months, ebf, and having mucousy poops, no seeds - I tried eliminating a bunch of foods but no change. He is also gaining weight very slowly. I don't know if my gut health is related to this at all, but just in case and for my own sake as well, I'd like to look into being more aggressive with healing than just being gluten-free. I just don't know where to start! Any advice? Resources? I'm also vegan, so suggestions that don't conflict with that would be most helpful. I'm thinking of going to see a naturopath but if I can figure this out on my own (with your help!!!) quickly then I'd rather do that because of costs and the time factor.

There are certain enzymes you should not take when you have celiac disease. This page talks about it:

I love Custom Probiotics. They are spendy to start with, but cheaper per dose. Many people find eating gf not enough and need to eliminate some or all grains/starches, dairy and sugars.
