I have a bag of cornmeal and no idea what to do with it!

I also have a bag of corn flour which I don't know what to do with either..I can only make so much corn bread and I don't want to waste either.. They are pricey because they are organic and they have literally been sitting in my pantry for 2 months unopened...

 

Ideas??

corn mush with maple syrup!

you can use corn flour for some of the flour in pancakes, biscuits, cakes, quickbreads, etc.

I use cornmeal to bread things for frying.  I'm in the south, so that includes lots of things, but whatever you like to fry....fish, hushpuppies, okra, eggplant, green tomatoes, stuff like that.

 

Cornbread.  We eat plenty of cornbread.  I add sausage and/or black eyed peas to Mexican cornbread, which makes a complete meal for us.

I use cornmeal to dust the bottom of my pizza and bread so it slides from the tray onto the baking stone...

 

Can you use the corn flour for tortillas?

I thought, hence I bought it, but apparently you need a special type of corn flour called Masa or something like that, not just regular corn flour.. my whole goal was to hand make tortillas like they do in Mexico so first I bought a bag of cornmeal...oops, then I got a bag of corn flour, still the wrong stuff..then I decided I watch too much Anthony Bourdain and I need to stop trying to cook everything I see in the places he visits!

I use it to stretch a meatloaf, and you can sub half of the flour in a pancake recipe, and make hoecakes. I also use it to fry chicken or fish.

johnnycakes (cornmeal-pancakes) are good

 

cornmeal-masala roasted brussel sprouts from Veganomicon (can also do with okra, but I haven't yet)

You can use the entire bag in a meal or two of arepas! We make the Venezuelan kind, which you then can slice open and eat like a sandwich with anything you want inside: ham&cheese, black beans, shredded meat, egg, avocado and sprouts, etc. You can also make the large, flatter colombian version and top it with good stuff or use it as any other bread to complement a meal. smile.gif

yum thank you all for the suggestions! I can't wait to try some and if I have any small amount left over I can always feed it to my chickens!

Apparently corn flour is used in the south as a coating for frying up anything from fish to okra to green tomatoes.

I make polenta with it, then set it in a pan to cool, then once it is firm I cut it into triangles, coat lightly in flour and fry on both sides until crispy and golden on the outside.  So fantastic.

I make arepas, but I use the masarepa, which is parboiled and very, very fine.  MMMMMMM, arepas....

 

I make a mock scrapple w/cornmeal.  I use any kind of meat or fish I have left over (or after I make bone stock and have removed the bits of meat).  I just don't use organ meats in mine.   I should, but we keep forgetting to save our rabbit livers...

 

Polenta rocks.

 

We like to sub 1/3 of our flour for cornmeal in pancakes, waffles, bread, pizza crust, grilled bread, whatever.  Good stuff!
