We try to eat gluten free in our home most of the time. Both my kids seem to have a wheat intolerance. I have coconut flour in my cupboard and have not used it too much. I am off to look up Elanas Pantry. Yea!Â

I have found that for many things I am happy substituting green leafy vegetables where I used to have something wheat based. I used to love fried egg sandwiches - now I prepare some lettuce and kale and top it with some black beans and salsa while the egg is cooking and eat that for breakfast. Occasionally I will put a little grated cheddar on top. It is delicious and doesn't take any longer than slicing bread and making toast used to.

Sometimes I make GF steel cut oats for breakfast but most of the time I am happiest with some homemade trail mix and fruit.
