Need a cake recipe! No dairy, no soy.

Hi, I am not so great at baking and substituting. My son has requested a dump truck cake. I bought a mold for a 2 layer cake mix. Now I need to find one. I don't mind using regular flour. We also use coconut flour. I wouldn't mind doing a carrot cake or banana cake, anyone have any ideas? I am leaning more toward a banana cake since the icing has to be sturdy to pipe for the mold I bought.

Running out the door but do a google search for "Wacky cake" and you should find it.  It's easy and vegan and yummy!  It was my go to before going gluten free for the kids.

Really yummy vegan chocolate cake. We are not vegan, but it is my go-to chocolate cake or cupcake recipe.

Can I use canola or any other type of oil to sub out the veg. oil? He can't have that because of the soy.

For the Wacky Cake?  Yes, I have used canola and even olive oil (not EVOO but regular olive oil).

I have a great chocolate zucchini cake recipe and a wonderful carrot cake recipe.  Both are fairly firm, even when gluten and dairy free.  Let me know if you're still looking ; )

I know this isn't the newest thread, but would you be willing to share those recipes? They sound great!

Absolutely!

 

Chocolate Zucchini Cake (modified from an allrecipes.com recipe)

stir together:

2 c brown rice flour (or whatever flour you use)

1 c sugar (or 2 c if not using maple syrup below)

3/4 c unsweetened cocoa

2 t baking soda

1 t baking powder

1/2 t salt

1 t cinnamon

add and stir:

1 c maple syrup (or sugar or whatever sweetener you like)

4 eggs

3/4 c walnut oil (other oils will work too, but walnut is particularly buttery and delicious)

3/4 c applesauce (unsweetened)

fold in:

3 c grated zucchini

3/4 c chopped walnuts

bake in greased 9x13 at 350F for about an hour

This cake is good as is, or I like to top it with a honey glaze while still hot (I just use the one from the Joy of Cooking, but it has butter)

 

Carrot Cake (modified from the New Basics cookbook)

2 c brown rice flour (or whatever you use)

1 c sugar

1 c maple syrup (or whatever sweetener you like)

2 t baking soda

2 t cinnamon

1/2 c walnut oil (or whatever oil you like)

1/2 c applesauce (unsweetened)

3 eggs

2 t vanilla

1 c grated carrots

1 c chopped walnuts

1 c shredded coconut (unsweetened)

3/4 c crushed pineapple

cream cheese frosting (for those who aren't dairy free)

8 oz cream cheese

3 t butter -- EDIT 3 Tablespoons, not teaspoons

1-1/2 c powdered sugar

1 t vanilla

lemon juice to taste

 

I wouldn't try to use it for building a shaped cake, but another recipe that is easy to modify to gluten-free, dairy-free, and even egg-free is the applesauce cake recipe from the Joy of Cooking (I know editions are different, but I don't have time to pull that out right now).
