Uses for leftover veggies from making broth?

I give our veggie broth veggies to the chickens, but I'm wondering if there are other uses for them.

I will occasionally puree some of them (carrots and greens like parsley, not onions and garlic) and add the puree to bread dough. I'll be watching for other ideas!

Interesting idea. Though I would think onions and garlic could be tasty too. Or does the boiling process kill their flavor?
