whole foods layered dessert recipe?

I've been craving some sort of layered dessert like this recipe:

1 1/2 c. graham cracker crumbs
1/4 c. sugar
1/3 c. melted butter
1 (8 oz.) pkg. cream cheese, softened
1/4 c. sugar
2 tbsp. milk
1 (8 oz.) container Cool Whip
2 pkgs. (4 serving size) Jello brand chocolate instant pudding
3 1/2 c. cold milk
Sprinkle with nuts (optional)
Combine crumbs, 1/4 cup sugar and melted butter. Press firmly into bottom of 13x9 inch pan. Chill 5 minutes or for firmer crust, bake at 375 degrees for 8 minutes. Cool.

Beat cream cheese with sugar and 2 tablespoons milk until smooth. Fold in half the whipped topping. Spread over crust. Prepare pudding as directed on package using 3 1/2 cups milk. Pour over cream cheese layer. Chill overnight. Spread remaining whipped topping over pudding.

 

There's a bunch of variations with slightly different crusts and/or different toppings (one version has strawberries & strawberry jello on top instead of the pudding).  Does anyone know of a similar recipe using whole foods?  Or any suggestions on converting the ingredients to whole foods ones?

Well, you can get whole grain graham crackers that are juice sweetened, plenty of sugar substitutes depending on what you prefer, butter's good, I have no issue with cream cheese as long as it is the real thing, milk is fine, Cool Whip can be substituted with real (single ingredient) whipping/heavy cream, you could make canten (agar agar) with whatever kind of fruit juice (and fruit) you like, home made pudding with real ingredients is great, and nuts are great.

 

You could also simplify a little and make a home made crust and key lime pie or banana cream pie with a layer of chocolate over the crust and under the pudding -- yum!

Okay, my recipe isn't even close to that. . .but it's my current fav and my children love it.  I've been making strawberry fool with meringues on top.  What I do is mash some strawberries and drain out some of the liquid.  Whip some cream in another bowl.  Then mix them together and taste.  At this point, I'll add a bit of sugar or the meringues.  To make the meringues, I whip 2 egg whites with 100g castor sugar (or super fine sugar, I usually don't have any so I throw some regular organic sugar in the food processor until it's like powder) until it's thick. . .like shaving cream. . .you can turn the bowl upside down and it won't move.  Then put dollops on parchment paper on a cookie sheet. . .don't worry about putting them close to each other, they won't spread.  Bake 100 celcius for 2 hours.  They are done with they sound hollow and you break them apart and they aren't gooey in the middle.  I usually bake them before bed then turn the oven off and let them sit in there overnight.  They are wonderful in the strawberry fool and we all are huge fans!!  I know it isn't what you were looking for. . .I guess you could make that dessert with homemade puddings, homemade whipped cream, and organic or homemade graham crackers. . .or you could try mine yummy.gif

Mmmm, that sounds good! One of my fav recipes is sort of like that, but a little more healthy. I don't know if all the ingredients are considered "whole foods" or not, though.

 

Now that I think about it... I think I'm going to make it this weekend.
 

Chocolate Silk Pie:

*Crush whole grain graham crackers, mix with a little bit of oil/melted butter and press into pie pan.

*Bake at 350 until looks golden brown (about 10 min)

*In blender, combine the following: 1 package silken tofu, 1/2 bar of unsweetened baking chocolate (melted), 1/2 c your favorite berry jam, 1/8 - 1/4 c honey (depending on how sweet you like it), 1 tsp vanilla.

*pour chocolate mixture into cooked pie pan and refrigerate for 24 hours (ideally, although I don't always make it this long!)

*optional, after cooled, you can add a layer of homemade whipped cream on top.
